Grandmother's Buttermilk Cornbread

This is THE BEST cornbread I have ever tasted! Bar none! And it is so easy to make, and takes so little time to whip up, there's really no excuse for using boxed cornbread mix anymore, with all of the preservatives and fake ingredients that go along with pre-packaged food. This cornbread is moist and dense enough so that it cuts very nicely, with minimum crumbling. I hate it when you try to cut cornbread into nice squares, and it just falls apart in your hands when you try to butter it and eat it. Yuck. That doesn't happen with this recipe. I found that the taste combination was just right - not too sweet, not too corn-mealy. The only thing that I adjusted at all was the flour - I like using 1/2 cup all-purpose flour and 1/2 cup whole wheat flour. I think it gives it a really nice density, and cutting back on white flour is never a bad thing. Thanks for the recipe, Bethany!

Chicken Pot Pie IX

I only gave this recipe three stars because of the many adjustments I made to it. My end result was probably a four or a five. Other reviewers were right when they said that this needed more liquid. It comes out of the oven looking like it is a good consistency, but given a few minutes to cool and set, it then becomes a dry, pasty glob. I will definitely increase the liquid next time; maybe double it. It will look runny at first, but then it will set up. As for the other changes, I added celery and diced potatoes, and probably doubled the amount of spices that were called for - Thyme, sage, rosemary, paprika. I agree with a reviewer that said that the crust should be baked for about 10-15 minutes without the filling, and then put the filling and bake for the allotted time. That way the liquid from the filling does not make the bottom of the crust soggy.

Jamie's Cranberry Spinach Salad

Excellent salad and dressing. The salad itself was very simple; nothing terribly unique about it. But the dressing! Oh my, the dressing! Really, really good! For the salad, I used Spring Mix rather than just spinach. And for the dried cranberries, I substituted a mix of dried cherries, cranberries, and raisins instead. That's all I had. And instead of the almonds, I used pumpkin seeds that were dried and then sauteed in seasoned butter. Used olive oil in the dressing instead of just canola or vegetable oil. The dressing was so flavorful, not too sweet, and really just perfect. This one's a keeper.

Skillet Rolls

These rolls were really good! I would, however, change a couple of things next time I make them. 1) To me, they were a bit too sweet, so I would cut the amount of sugar in half next time, and 2) more flour was needed during the kneading process than what the recipe mentions. I ended up using quite a bit more flour by the time the kneading process was over, due to the stickiness of the dough. Otherwise, these were really, really wonderful.

Gourmet Pumpkin Pie

This was a good (not great!) pumpkin pie. Personally, I cannot imagine it would have tasted like much of anything if I had not taken the advice of other reviewers and added cinnamon, nutmeg, and cloves to the filling. I loved the idea of adding the pecans to the crust, and also loved the topping. But I think that next time I will just stick to the filling recipe on the Libby's pumpkin can, and then use the crust and the topping idea from this recipe.

Chicken Pot Pie II

This was so yummy! I made it exactly as the recipe called for EXCEPT I made a double crust - instead of only having the crust on the top of the pie, I surrounded it with crust, top and bottom. So good! As for the portions, I agree that these were very BIG portions. But the pie is so delicious that you really want to eat the whole thing. Thank you for the recipe. Now I don't have to buy those overpriced, tasteless frozen pot pies.

Breaded Toasted Ravioli

These were good, not great. Easy and simple. The only thing that I did different was to spray the raviolis with olive oil cooking spray. I felt that without that step they could tend to be overly dry. Also watch them as they bake; they could overcook.

Tofu Lasagna

I found that I had to make so many alterations to this recipe to bring it up to standards - needed more sauce, more seasonings, more cheese, etc. - that by the time I was finished it was not even the same recipe anymore.

Apple Pie by Grandma Ople

This pie was REALLY good, but I could only give it 4 stars because there's no cinnamon in the recipe! How can you make apple pie without cinnamon? Sorry, but I gotta have it. Other than that this pie was mmm-good and easy.

Italian Vegetarian Patties

I love, love, love these patties! The only changes I made were, 1) adding about 1/2 cup of chopped onions to the hot oil and rice, and 2) to use a light-flavored olive oil rather than vegetable oil, in keeping with my efforts to make healthier food choices. I didn't have to alter the amount of water, or change the recipe in any other way. Not sure why onions would not be included in the recipe, though. To me, onions are the backbone of flavorful, savory cooking. I love how these patties were not dry or cardboard-like, as so many vegetarian "meat" recipes can be. Thank you for this recipe, SHECOOKS2. It is a keeper! Even my meat-and-potatoes husband liked them.

Cookie Balls

I made these for my husband's birthday party, and everyone passed on the cake so that they could eat these yummies instead! Personally, I thought that they were too sweet. I am giving this recipe a 5 simply because I seem to have been outnumbered by those that thought they were simply heaven on earth. Next time I make them I will use semisweet morsels instead of the white chocolate chips, to cut the sweetness. I will also try other flavors of sandwich cookie - lemon, vanilla, etc. I rate these highly because they are SO SIMPLE and the results are so impressive.

Mother's Ham Casserole

I really loved this casserole, but am only giving it four stars due to the excess saltiness of the original recipe. I cut way down on the salt to 1/4 teaspoon, since both ham and celery are already salty. I also used saltine crackers crumbs for topping, since I didn't have soft bread crumbs. Thanks for a good leftover ham recipe. Yum.

Blackberry Pie III

I don't know why this pie has had so many rave reviews. I made it exactly as the recipe stated, except I DOUBLED the amount of flour, since all the reviewers said it was too runny. Even with that alteration, this pie dripped a massive amount of juice when it was baking, and ended up way too runny, even with the added thickening from the flour. I pride myself on my home-baked pies, and I will never make this one again! I gave this pie two stars, and even then it was only because it at least had a good flavor.

Walter's Chicken and Mac

I am giving this recipe 4 stars rather than 5 simply because, while it is really good as is, I like my doctored-up version better. As with most recipes, I like to give this one my own flare. I use a 7.5 oz. package of macaroni and cheese (Kraft or generic, it doesn't matter)instead of just macaroni. That gives the recipe an even more cheesy taste. Instead of the Cream of Chicken soup and the mushrooms, I use Cream of Mushroom soup. I chop up the onions, but also some celery, and I saute them in a fry pan with about 3 T. butter. Then when they are tender, I add the cooked and cut-up chicken and I fry it all together for a bit, until the chicken has some nice brown to it. Due to the fact that I use the store-bought mac and cheese mix that has the powdered cheese packet, I do add more milk than the recipe calls for (about 1-1/2 cups). At the end of baking, I sprinkle a mixture of butter and saltine cracker crumbs onto the top and bake about another five to ten minutes, until crisp. Whoever "Walter" is, thanks for this yummy recipe! We need to submit a better photo of it for this site--the current one is not a very appetizing presentation. :-)

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

If I could give this cake 6 stars, I would!! This is by far THE best chocolate cake I have ever had! The cake batter mixes up really thin after adding the water. Don't worry - it will bake up to be very dense and rich. I made one yesterday for my husband's birthday. We ate one piece each, then shared with friends. I am baking another one right now to take to work tomorrow. I don't share recipes until they are up to my high standards. This one definitely is! Note: if you want a little different taste to the cake, try adding strong coffee instead of the hot water. Yum!

Filet Mignon with Rich Balsamic Glaze

Didn't want to pay for filet mignon, so I purchased New York steaks instead. Didn't really matter - the meat was awesome cooked like this and the glaze - oh my gosh, was it good!!! I have since used that same glaze on chicken and on salmon, with equally yummy results.

Asparagus Cashew Rice Pilaf

Garlic Cheese Biscuits

These truly are as good as the biscuits served at that certain seafood restaurant chain. Light and flaky, cheesy, savory bundles of bliss. The only thing I felt they needed was a bit of Lawry's seasoned salt added to the batter. I did not measure - just added to taste.

Health Nut Oatmeal Cookies

While there is no mistaking these for the ooey-gooey cookies that we are used to, they are very good and they are so healthy that they make you feel like you are really doing something good for your sweet tooth. I grinded up all of the seeds into a meal before adding to the mix, and added raisins for sweetness and moisture. Yum!
