Fabulous way to use extra zucchini, and that cornbread mix in your cupboard. Great flavor, too. Not too heavy. Excellent side dish! I've made this several times already and it's made it into my "fave allrecipes.com recipes" collection. =)

I'd give this recipe 10 stars if I could. What a fantastic idea! I've renamed them 'PB&J cookies'. They actually taste like a bite of a peanut butter and jelly sandwich. I have no idea why other reviews were so bad. 'Cardboard' taste? Hardly! They're perfect. I also filled some w/melted chocolate. 'Reese's cookies'. A new tradition for the holidays!!!!

Yeah, don't know where you can find a 6oz. can of lemonade...so I just got the 12oz. and split it. Make sure you use a good quality crust. You can ruin this pie if you skimp on the crust quality..i.e., generic brand. Very tasty, otherwise! Like lemon ice cream!
