About this Cook
After having a successful career in the web industry, I am now "officially" a stay-at-home mom and getting ready to celebrate 8 years with my wonderful husband. We just moved to a ranch in Texas after having always lived in the suburbs all my life! For some reason, this has inspired me lately to cook and clean like a good little farm housewife! Ha! I love going online every morning after the kids have gone off to school and deciding what to cook for dinner that night. I use my crock pot a lot for dinners. If it's got potatoes in it, it's for me!
My favorite things to cook
I love to use my crock pot! I'm really interested in cooking homemade soup. I've mastered a wonderful baked potato soup that my family loves. I also love cooking my Dad's famous recipe for italian sauce for spaghetti or lasagna. He's had this recipe for over 30 years and I finally got him to write it down for me! It's all I use now for my italian dishes. I also love to cook down home comfort food. It's very satisfying to see my husband with a big smile on his face after he tastes my cooking!
My favorite family cooking traditions
I make "the best" Sweet Potato Casserole. This recipe was passed down to my from my mother. All of my in-law relatives always ask for it around the holidays. Even the younger kids love it. It's just delicious and I've been making it for YEARS!
My cooking triumphs
Still looking for that "most awesome" recipe. But, so far I've mastered a homemade italian red sauce, baked potato soup, sweet potato casserole and several casseroles.
My cooking tragedies
I was determined to make a glorious coconut cream pie for Thanksgiving 06. I found an awesome recipe in my Southern Living cookbook. Followed it to a T. But, it turned out as a big pie plate full of coconut blop. It tasted really good, but did not set! Don't know why...knowing me, I'll attempt the same recipe again and this time it will ROCK!

Soft Chocolate Cookies
Soft, cake-like cookies! Wonderfully chewy! I even used Egg Beaters instead of eggs and it still came out wonderful. Be sure to use parchment paper or spray your cookie sheet. I had to leave mine in the 350 degree oven for a good 11 minutes...Don't under-bake these.

Queenie's Killer Tomato Bagel Sandwich
Who knew something so simple, would be so delicious!! Instead of a roma tomato, I used my garden-grown beefsteak tomato...yum-my! The salt, pepper and basil make it just perfect. Also, used an "everything" bagel from Sam's Club. Made the perfect light dinner!!

Marinated Turkey Breast
Awesome recipe! I slow-cooked mine in the crock pot and the turkey breast just fell apart. It was more like pulled-turkey! I threw in some little red potatoes and had an instant meal.
