Jackie's Spinach and Apple Salad

The dressing was delish! Everything was great in this salad, except we used shredded cheese and it wasn't noticeable. No need to add fat when there's no flavor! Will try with dried cranberries instead.

Pumpkin Pie Cake I

Delicious! It was much better than we anticipated! The crunch of the nuts was perfect in every bite. We will be making it again, but thought that it was very sweet, and will try to cut back on some of the sugar.

Portobello Mushroom, Fresh Peppers and Goat Cheese Pizza

This is a great recipe because the toppings can be easily changed to suit your guests tastes. The only problem I had was getting the crust to bake all the way through without burning the top. Next time I will either use a premade crust or grill the pizza.

Very good! I used fresh basil and added tomatoes. We took it on a wine tasting picnic and it was a hit! Nice change from the typical pasta salad.

American Lasagna

I was a bit disappointed with this lasagna. It seemed dry and after sitting for 10 minutes, it cooled too much. I didn't get many compliments for this one, even though the flavor was good.

Roasted Pork Loin

I made this for our first Valentine's Day dinner and it was a huge success. My husband loved it and it was so easy to put in the oven while I worked on the rest of the meal. It seemed even better as leftovers the next day!

Easy Cheese Ball II

We brought this cheeseball to a Superbowl party, and everyone raved about it! I actually felt a little guilty since it got more attention that the other, more time-consuming treats that other people brought! I have also made it for Thanksgiving and a work party, and it always disappears with many compliments! It is the easiest and cheapest appetizer I've found.
