This was very good! It is nice and healthy. I have been looking for new things to take to work for lunch so I don't eat junk, and this one is a winner. I have leftovers from tonight's dinner packed up for my lunch tomorrow. The only thing I did differently was saute the onions first, and then added quite a bit of fresh garlic. I made some cornbread to go with it, and it was a perfect combo.
