Country Apple Dumplings

These were good, but SO rich (I even cut the sugar down to 1cup and the Mt Dew down to 8oz). I think next time I will try rolling out the dough a little bit so that I can fill each dumpling with more apple, cut back the butter to 3/4cup, and the sugar to 3/4cup.

Chocolate Mint Candies Cookies

I have made this recipe twice now and love it. The cookies are definitely indulgent; super sweet and rich. My second time making them I melted mini-reeses on half of the cookies, and that was just as good. Thanks for the recipe!

Dark Rye Bread

Excellent recipe! The only changes I made were to increase the caraway seed to 1tsp, and I used light olive oil for the vegetable oil. It turned out perfect! My only complaint is that it makes just one loaf... next time I will double the recipe!!

This is delicious! It definitely calls for too much sugar though. I cut it down to 3/4 cup (using a combination of succanat and brown sugar), and that was perfect. Thank you!!

Cardamom Chicken with Salt and Pepper Crust

This is an excellent, simple marinade. I didn't have enough fresh garlic on hand so I used garlic powder instead. Also, I didn't have time to let the marinade rest, and it came out full of flavor regardless. Definitely a recipe I'll use again!

Summer Lasagna

This was quite tasty, but as other reviewers have mentioned, it is very watery. I salted the zucchini beforehand, and I still had about a cup of liquid at the bottom of the pan. Next time I think I will salt the zucchini for a longer period of time and grill them slightly before assembling the lasagna. I also might use a combination of zucchini and eggplant, since eggplant isn't nearly as watery.

Swedish Rye Bread

Excellent recipe! I used a combination of spelt and bread flour in place of the all-purpose flour. I also added about a teaspoon and a half of ground cardamon. SO good! Wonderful flavor and very moist. Only change I'll make next time is to add caraway seeds.

Venison-Bacon White Chili

Very tasty. I added a tomato and about 3/4 of a jar of salsa, used fresh jalapenos instead of canned chiles, and omitted the flour/butter. Next time I will add even more tomatoes, because as my long-time-cook-boyfriend pointed out, tomatoes add acidity which helps to tenderize the meat.

Butternut Squash Bread

I followed the recipe exactly, and I'm sorry, but it's awfully bland. It's very light, airy, and soft, which is nice... but it really needs more flavor. I would strongly recommend adding more salt, and some additional spices might be a good idea as well. That being said, I'm sure this would be a wonderful bread for kids. Excellent base recipe, just needs a few adjustments.

Big Soft Ginger Cookies

These are wonderful! I didn't have access to an electric mixer, so I had to mix them by hand. This made them more dense, but still good. As mentioned by almost every other reviewer - these are super sticky. I would definitely suggest refrigerating awhile before rolling out the dough.

Dog Treats I

my pooch loves these. I replaced the cornmeal with wheat bran, because I didn't have any. I also replaced the margarine with canola oil. The only reason I gave these 4 stars instead of 5 is because they lack nutrients. If I make them again, I will probably add grated veggies or meat.

Creamy Butternut Squash With Cinnamon Soup

I altered this recipe quite a bit (added an apple, a pear, and a few carrots, increased the sugar, omitted the cayenne), and it turned out fantastic! Definitely a recipe I will use again and again.
