About this Cook
My husband and I have served as Evangelical missionaries in Spain for twelve years. We are now back living in the States. After 21 moves in 27 years I call no place my hometown. My roots are in Jesus Christ.
My favorite things to cook
I love Spanish food! Real Spanish, not Mexican, not Tex-Mex, but Spanish! I make a great paella, and my Tortilla EspaƱola almost always has 'muy buena pinta'.
My favorite family cooking traditions
I have picked up a lot of Spanish cooking traditions. But, Christmas Eve is always Norwegian Meatballs in Gravy with Lignonberries, mashed potatoes, and peas. I picked up recipes from my Norwegian aunt while growing up.
My cooking triumphs
In December 2003 I won an all-village baking contest in Spain for a Raspberry Cheesecake Brownie Pie!
My cooking tragedies
We once had friends over for dinner, and I mis-read a recipe for stuffed pork chops. They waited an extra hour before I was able to serve them! But at least it turned out!

Orzo and Tomato Salad with Feta Cheese
I didn't change anything in this recipe. It's delightful exactly as it is. I agree that it is best if chilled overnight to blend the flavors. It is also nice served warm just after mixing.

French Spring Soup
This soup was wonderful! Like so many other soups, it was best as leftovers after sitting a few days in the fridge. The only thing that I changed was to use a small can of evaporated milk for the cream, and then add a bit of potato starch for thickener. I will definitely make it again!

Cabbage Beef Soup
My family really liked this recipe. I halved it and converted it to a pressure cooker recipe, which worked great. My husband said it's a keeper.
