Roasted Pumpkin Seeds

This was a good, simple recipe for pumpkin seeds. I thought it might be good if I didn't rinse the seeds, as I've always done before, and it might add some pumpkin flavor. This wasn't a good idea as the pumpkin on the unrinsed seeds burned a little. My suggestion is to be sure you rinse the seeds well. I think other reviewers suggestions of adding garlic is a good one. I'll try that.

Southern Praline Pecan Cake

Unfortunately, I won't be eating any of this cake myself as I made it for a cake walk. It looks beautiful and smelled SO delicious while it baked. I did decrease the oil to 1/2 cup and baked it about 15 minutes longer. I also added a powdered sugar and milk glaze, just to make it look prettier. I will try this again when I get to eat some too!

French Bread Rolls to Die For

Great recipe. I mixed the dough in the bread machine, then proceeded according to the recipe. I though the texture was wonderful. I put the extra rolls in the freezer and have been using them as needed. They still smell wonderful after I've warmed them up in the microwave.

Green Punch

I loved the neon green color of this punch. I used it for my daughter's Halloween party, and used a suggestion from another recipe to fill a latex glove with water and freeze it. Then, you can float the frozen hand in the punch. The changes I made to the punch were: I used 1 can concentrate orange juice, and one carton regular orange juice. I also added only 1/2 cup sugar, and no extra water. It was good, but the color really made the recipe. It looked like a witch's brew!

Smushed Apples and Sweet Potatoes

I thought this was delicious. I didn't cook the apples long enough that they "mashed" along with the potatoees, but I didn't think that mattered. I liked the bite of apple flavor mixed in with the sweet potatoes. This is wonderful and healthy on its own, but buttered, it's heavenly!

Ricotta Stuffed Squash

This was delicious, lowfat and healthy. I used fat free ricotta cheese and it was delicious. I made up the filling and can just whip up a yummy lunch any time I want! I loved it!

Baked Orange Roughy Italian-Style

This was very good. Next time I will be sure to dry the fish before I coat it with breadcrumbs so it isn't soggy. I used butter flavored crisco spray in place of the butter to make it even healthier. The flavor was very good.

Italian Chicken with Pesto Potatoes

We really enjoyed this recipe. I made a few minor changes. First of all, I pounded the chicken flat, placed a slice of cheese inside the chicken breast, then rolled it up and wrapped it with proscuitto - couldn't find parma ham. Next, I thought the reduced balsamic vinegar sounded like a very strong flavor, so we just drizzled UNreduced balsamic vinegar over the chicken. It was delicious! I also cooked the potatoes in the microwave rather than boiling them. I didn't really change the ingredients, just the process to make it simpler.

Orange Slice Cookies I

This was a yummy oatmeal cookie and the orange flavor made it especially unique. Next time I make it, I will be sure to snip the orange slices into smaller pieces. I cut them along the "sections" and the bits were too big. All in all, a hit. I had several requests for the recipe.

Spaghettini Chicken

This was OK. I opted to cook the spaghettini in the broth thus mine wasn't the soupy consistency of the others. Instead, mine ended up a bit dry. If I made it again, I'd add a little more broth to hopefully get a happy medium. In any case, we weren't that crazy about the flavor either.
