Acorn Squash

This is the way I used to eat acorn squash, but I hadn't had it for years. It was very good. I used the microwave, and steamed the squash for about 9 minutes, with 1/4 inch water and covered with plastic wrap. (The squash was small)

Greek Butter Cookies

These were very good. I used half the dough and shaped them into S's. This was a little bit difficult, but they turned out OK. I then sprinkled them with crushed candy canes. The other half, I made into raspberry thumbprint cookies - rolled into balls, made an indentation with the tip of a wooden spoon, filled with just a dab of raspberry jam. Very versatile and easy to immediately after preparing the dough. They would be nice with hershey kisses, dipped in chocolate, sprinkles... the possibilities are endless.

This was even better than I expected it to be. The flavors blended fabulously and was a hit with all. I loved that it went together so easily. I added the pasta separately, so it didn't "plump up". That way, the leftovers will be equally delicious!

Twisted Chicken Salad with Tostadas

This was a fun and easy lunch to send with my teenage daughter. I used Morningstar chicken strips, but otherwise followed the recipe. For simplicity, I used Tostitos Scoops instead of making tortillas myself. That way it was perfect to take for lunch.

Tuna Melts

I used this as a basic recipe, and altered it to my family's tastes. I omitted the onion, and added pickle relish and sliced celery. I used about 3 T mayonnaise to 6 ounces tuna, and replaced the shredded mozzarella with slices of monterey jack cheese placed on top of the tuna melt. Finally, I toasted whole wheat english muffins and then baked the melts. The kids BOTH gobbled them up, which rarely happens at my house.

Toasted Pumpkin Seeds with Sugar and Spice

These were delicious and a nice change of pace. They were so flavorful and easy to prepare. The only change I would make next time is to use only about 2 more Tablespoons sugar when I heat them in the skillet. I could hardly get all 4 extra Tablespoons of sugar to dissolve, and think the pumpkin pie spice and sugar mixture would stick just fine with half the amount of sugar syrup.

Asian Lettuce Wraps

My 14 year old daughter and I made these tonight and they were fantastic! I thought they were very authentic, and we even used a vegetarian ground meat substitute. We omitted the ginger and the chili sauce, and we thought it was perfect. I used Boston lettuce, and needed 2 small heads. We ate half and will save the other half to use with the second lettuce tomorrow.

Macadamia-Crusted Sea Bass with Mango Cream Sauce

You get gourmet flavor with a reasonable amount of effort with this recipe. Mine was delicious, and I think it would work well with many different varieties of fish. I might puree the mango cream sauce next time, as I found it difficult to dice the mango into anything that looked attractive - but the flavor was fabulous. Picky younger daughter liked the fish without the sauce. An impressive dish!

Amazing Simple Thai Tofu

This was easy and so delicious. I used the suggestion to combine the peanut butter with some coconut milk, and that worked beautifully. I thought the flavor was perfect, not too overpowering, but still strong enough to be satisfying. I'll definitely make this again.

Lemon Rosemary Salmon

Nice, simple flavor. I used foil packets as previously suggested. I think I overcooked mine a bit though, as they were quite small. No flavor was overpowering and picky daughter ate it all without being prodded. Used my fresh rosemary from the garden.

Apple Pie by Grandma Ople

I thought this pie would be doomed. I prepared it up to the point where I poured the butter and sugar mixture over the apples. At that point, I had to leave it and come back 2 hours later to bake the pie. I thought the butter and sugar would turn into a rock in the middle of the pie. Even enduring such abuse as this, the pie was delicious! It was easy as well. What more could I ask for!

Lemon Artichoke Romaine Salad

The ease of this recipe is what earns its 5 stars. It is delicious, and I had everything on hand to throw it together at the last minute. I used a bagged salad, and liked the lightness of the dressing - plenty of flavor but it wasn't oily. My kids even gobbled it up!
