Perfection! Had to use parmesan cheese - and went a little heavy on the cheese too. Also used the whole can of artichokes because I love them. I broiled this for the last 3 minutes or so. It was fabulous! Will definitely make this again.

Tex-Mex Quinoa Salad

Reviewed: Feb. 9, 2012
Very good and a flexible recipe. I didn't have the cotja cheese so I used some jalapeno jack cheese, diced. I used plain tomatoes - drained, as other reviewers said the dish got soggy. It would be easy to make it Italian, adding olives and canellini beans - or Greek - with olives and feta.

K-Dub's Alfredo Ravioli Bake

Reviewed: Feb. 4, 2012
This recipe received high marks from my family. I made this ahead for a ski trip, and stuck it in the oven as we arrived. It was easy to assemble and easy to customize. I put chicken on half the casserole, and left the other half vegetarian. I would love to find some easily available lite alfredo sauce to make it a little more healthy, but will make it again either way.

Manhattan Clam Chowder

This was easy and good on a chilly winter night. I was not able to start mine 8 - 10 hours ahead of dinner time, so I cooked it for 4 hours on high instead. This worked just fine and we all enjoyed the meal,

TJ's Creamy Salsa

Reviewed: Jan. 16, 2012
This is a nice change from regular salsa. It would be great to offer this as one of several salsa options for chips! I didn't have the Mexican Style chili powder, but it was great with regular chili powder as well. Thanks for sharing this yummy recipe!

Original Nestle® Toll House® Chocolate Chip Cookies

Very good. My husband likes crispy cookies, while my children like soft cookies. These were on the soft side. I might try to cook them a minute or two longer to see if they are more to my husband's liking.

Raspberry Squares II

Reviewed: Dec. 16, 2011
These were just what I was looking for and they turned out great I went easy on the raspberry jam, thinking it might be too rich and sweet. That was not the case and I would use the full amount next time. Made for my daughter's teachers Christmas Luncheon.

Souper Simple Mac 'n' Cheese

Reviewed: Nov. 30, 2011
I expected to get a negative reaction from my kids when I served this - just because it is different from what they are used to. They thought it was great! I loved how easy it was, as well as the nice, creamy texture. I'm going to add a can of cheddar cheese soup to my pantry from now on!

Baked Spaghetti

Reviewed: Nov. 24, 2011
We loved this oh-so-flexible recipe! I used a whole pound of spaghetti, but only had about 15 ounces of ricotta. I left out the ground beef but it would be good with any vegetables added. It still turned out wonderful! On top of that, it went together in no time at all! Will be using this again when I am in need of a good meal - fast!

Hearts of Palm Risotto

Reviewed: Nov. 6, 2011
LOVE this risotto! It was a big hit with my family. I was in a hurry and didn't follow the instructions at the beginning of the recipe, toasting the rice. I also used a couple teaspoons of minced garlic in place of the onion. As long as you stir in the liquid slowly, this is foolproof.

Famous No Coffee Pumpkin Latte

Reviewed: Nov. 5, 2011
I loved the flavor of this, but I had a hard time with the bits of pumpkin in the drink. I know this is a personal issue, as I dont like pulp in my orange juice either. Maybe next time I will try giving it a whir with my immersion blender.

Mary's Roasted Red Pepper Dip

Reviewed: Oct. 30, 2011
I halved this for six and we cleaned the bowl! I loved the subtle tang of the red peppers and it was so nice and creamy. I did scale the mustard back a bit. Used Spicy Brown mustard and probably added about 1 t for the half recipe. Served it with tortilla chips and it was a big hit. I think it would be nice served with Triscuits as well.

Pulled Chicken Crescents

Reviewed: Oct. 27, 2011
My family really enjoyed this recipe. I wasn't expecting to like them as much as I did, but I was pleasantly surprised. We used Sweet Baby Ray's BBQ sauce. I omitted the egg because I didn't want to mess with it just for appearance sake. I sprinkled the cheese on top and pressed it into the crescent roll. It worked fine. I loved that they were quick to make and delicious to eat. I served them with a vegetable soup that I made in the Crock Pot for a hearty, warming meal. We'll be making them again for sure!

Spinach Artichoke Lasagna

Great Flavor - tangier than your ordinary lasagna. I don't like lasagna that is watery after cooking - and this one really absorbed all the juices. The feta on top is a nice touch.

Great cookie. I loved the combination of chocolate, oats and peanut butter. Nice change from a traditional chocolate chip cookie. My family liked the texture too - not too chewy, not too crispy - just right!

New Orleans Corn Bisque with Smoked Sausage

Reviewed: Oct. 12, 2011
Fantastic! I couldn't believe the way it thickened up - even when I used skim milk! I added a little bit of creole seasoning as other people seemed to think it was bland. I don't know that it really needed any extra seasoning for me. I used turkey sausage, sliced and then halved. The smoky flavor came through giving it plenty of flavor. Like other reviewers, I cooked the potatoes along with the onion and sausage. It came together quickly and disappeared in no time as well!
