Roasted Green Beans with Almond Brittle

This is a yummy recipe that is great for special occasions, or just something to go with a simple meat dish. The almond brittle is easily made ahead of time, so the dish goes together quickly. The only problem I had was that it was hard to eat the brittle with the beans - it rolls off your fork. This is a small complaint as the overall taste is very good.

Broccoli Quiche with Mashed Potato Crust

I really liked this, as I'm not much of a pie crust person. They are too much fuss for me. The only thing I would change about this would be to cut back on the amount of potatoes in the crust and I'd add a couple eggs as well. But all in all I really liked this. It went over well with everyone!

So delicious! I made this for lunch today and was so anxious to eat it, I forgot the mushrooms. Next time I'll add them and I'm sure it will be even better. I loved the crunch from the almonds.

Restaurant-Quality Baked Potato Soup

Very yummy soup. I used vegetable broth in place of the chicken broth to make it vegetarian. It was thick anc creamy and went over well with the three teenagers I made it for. I served it in bread bowls, and that made it extra nice.

Super Bowl Bread Bowls

This bread is delicious and worked wonderful for the baked potato soup I made. I made 5 bowls, rather than 6, and the size was nice. They got wider than they did taller, but still worked well. I should have spaced them out on two baking sheets, as they were too close together and "fused" at the sides. They still worked fine, but just weren't as pretty.

Spinach Dip with Water Chestnuts

This is super yummy! I used a Lipton Recipe Secrets vegetable soup mix. It had a similar recipe on the box that called for only 8 ounces of sour cream. I combined the two recipes, using less sour cream and mayonnaise than this recipe calls for, yet more than the Lipton recipe. It is delicious! Vary the amounts to get the consistency you like.

Home Style Macaroni and Cheese

This came out beautifully creamy. Unfortunately, it had no flavor - and I even used sharp cheddar cheese. The only thing I could taste was the dijon mustard, which wasn't particularly good. I don't know what I would do to get a "cheesier" flavor. I think I'll try a different recipe next time.

Enchilada Lasagna

This was pretty good. The ricotta made the texture a bit mushy. I might try it with cottage cheese sometime. Still, it was good enough that I'll look forward to having the second one that is in the freezer. I substituted regular corn for the mexicorn, and Morningstar Chicken strips for the chicken. I could only get 3 layers in, rather than four.

Pumpkin Bread Puddin'

I thought this recipe was very good, it's just not my favorite type of dessert. It was easy to make, and turned out fluffy, creamy and the flavors blended together nicely. I think I would prefer something with a little stronger pumpkin flavor. Still, if you're looking for a Pumpkin Pie alternative, this is one to try.

Acorn Squash

This is the way I used to eat acorn squash, but I hadn't had it for years. It was very good. I used the microwave, and steamed the squash for about 9 minutes, with 1/4 inch water and covered with plastic wrap. (The squash was small)
