About this Cook
I love to cook when I have the time, but when I don't, I like delicious things that I can get on the table quickly. I am married to a wonderfully adventurous eater, but we are sometimes limited by our two teenage daughters. The older one eats mostly pescatarian, and has encouraged us to eat organic foods whenever we can. She will eat almost anything other than meat. The younger one is a picky eater, and has a laundry list a mile long of foods she dislikes. I do think she is improving however. I am hoping!
My favorite things to cook
I most like making soups, but I also enjoy baking and making gourmet pizzas. I love trying new recipes and don't make something twice unless it is out of this world.
My favorite family cooking traditions
Growing up, my family always made frozen pizzas on Sunday nights. Now, I have that tradition with my own family, but we make our own, from the dough to our favorite combinations of toppings - traditional to unusual.
My cooking triumphs
I have found quite a few recipes that I can put together in a hurry, but still taste fabulous.
My cooking tragedies
Soon after I was married I cooked a ragout from the Silver Palate cookbook. It was awful, and it seemed to last forever as we weren't about to throw it away and waste our hard earned money! We still joke about it.

Shrimp Francesca
Perfection! Had to use parmesan cheese - and went a little heavy on the cheese too. Also used the whole can of artichokes because I love them. I broiled this for the last 3 minutes or so. It was fabulous! Will definitely make this again.

Tex-Mex Quinoa Salad
Very good and a flexible recipe. I didn't have the cotja cheese so I used some jalapeno jack cheese, diced. I used plain tomatoes - drained, as other reviewers said the dish got soggy. It would be easy to make it Italian, adding olives and canellini beans - or Greek - with olives and feta.

K-Dub's Alfredo Ravioli Bake
This recipe received high marks from my family. I made this ahead for a ski trip, and stuck it in the oven as we arrived. It was easy to assemble and easy to customize. I put chicken on half the casserole, and left the other half vegetarian. I would love to find some easily available lite alfredo sauce to make it a little more healthy, but will make it again either way.
