Slow-Cooker Chicken Tortilla Soup
This is a fabulous recipe. Adding sour cream is a must, even if it's just a touch. I also used several of the other suggestions: Using two cans of broth instead of broth and water, adding a can of black beans, putting frozen chicken straight into the crock pot, and adding a few slices of avocado on top.

Cottage Cheese Chicken Enchiladas
I thought the cottage cheese was kind of a weird ingredient, and I was right. These tasted more like lasagna than enchiladas. These are not bad tasting, they just don't taste at all like enchiladas.

Caramel Chocolate Cookies
I love these cookies. I decide not to use the vanilla coating and instead rolled the dough in sugar and crushed pecans. I use Rolos for the center, and they work great.
