Creamy Potato Leek Soup II
The bacon is what makes this. (and saute-ing the leeks really brings their flavor out) Not at all bland like some potato leek recipes. Everyone loved it. All I had on hand was an 8oz package of Applegate Bacon which is only half of what it calls for but it was perfect. I only had 2 % milk but i also used my immersion blender and pureed it so the soup was still creamy. I will make this again (although maybe not every time I make potato leek soup )

Spicy Maple Baked Beans
Letting it cook a bit longer/ sit with lid on thickens this dish, tenderizes the ham and improves it's flavor. I didn't have beans with pork, only the original style, but I think beans with pork would have added more flavor as would using some bacon. DH and toddler love it & say add it to my list of meals to make.

Cheddar Broccoli Chicken and Mashed Potatoes
will make again i added chopped broccoli stems to the pan when chicken was almost done cooking-they have more flavor. i used a can of cream of cheddar soup and chopped the chicken smaller. i definitively want to try this with rice.
