Banana Muffins with a Crunch

good, i used whole wheat and multigrain hot cereal, but the granola didn't crunch, will try a "harder" granola next time instead of a "ricier" one

Blackberry Cobbler

made it for my officemate for his birthday (he loves blackberries). he loved it and ate it all himself in a day or two. i got a taste and thought it had too much butter and would do without the sugar on top. i prefer more blackberries to dough.

Spaghetti Squash I

so amazingling good, i did vary it up some by adding some sun dried tomatoes and roasted red peppers and leaving out the olives. used dried basil and oregano and a little salt and olive oil. yum!

Fresh Grapefruit Juice Smoothie

I really didn't follow the recipe, but it hasn't been rated so here it goes. The proportions are good. I just subbed vanilla yogurt, a nectarine for a banana, and used a bunch of frozen strawberries. I know it is cheating, but it is especially good with a splash of vanilla creamer!

Zucchini Patties

I had no idea zucchini could taste so good! I did change the recipe a bit but the spirit remained. I used a mix of yellow and zucchini squash and added a banana pepper and jalapeno as another reviewer since I have tons of those in my garden too. I used a third to half the cheese - a combo of cheddar and parm. Also added chopped garlic, cayenne pepper and chili powder, and fried up using cooking spray. Delicious plain!

Fluffy Biscuits

Anything that you need to knead and roll is kinda messy, but these were pretty easy. They tasted great even though I used a stick of light butter instead of shortening. Also used a glass to make the biscuits since I didn't have a biscuit cutter. Went great with a bacon, egg and potato skillet.

crusty on the outside and soft inside. added some spices, garlic, parm cheese, next time will add more I think, but would be great on its own. this is especially good dipped in olive oil and spices. a real hit at dinner last night.

Baked Pineapple Casserole

I used half the butter and sugar. This is my quick fall back dish when I need something with pork/ham for dinner or to take for potluck--everyone loves it! Plus it is sooo easy and fast. I like adding vanilla and almond extracts and cherries, topping with cracker crumbs and cheeses.

Golden Chocolate Chip Cookies

What a hit! Everyone loved them. I used peanut butter chips and chocolate chips. They were a little crispier than I thought they would be. They came out softer on a cookie sheet covered in foil.

Slow-Cooker Chicken Tortilla Soup

Great soup and very easy. I added black beans and lots of cilantro and hot peppers. Once you have the base of this recipe, you can add what you want and not screw it up.

Alysia's Basic Meat Lasagna

My favorite lasagna ever! I've made it several times, but I never follow the recipe exactly. I've used ground turkey, all mozzarella, and added peppers and mushrooms to the sauce, as well as other italian spices to the ricotta cheese and to the meat. Freezes great, makes a ton--I use 15" x 10" dish. I think it works great with a jar of Ragu traditional sauce and almost a whole jar of Classico Tomato Basil while omitting the tomato sauce--they meld great together and give you more sauce which I love.

Good Old Fashioned Pancakes

I used this when we had some surprise guests and I couldn't find my usual pancake recipe. They were soooo fluffy and tasty! I doulbed the recipe and accidently didn't double the butter, but didn't notice. I also used some lemon juice and vanilla extract to enhance the flavor. I love how the batter really poofed, thanks to all the baking powder. This is my new regular!
