Easy Pumpkin Muffins

Reviewed: Nov. 5, 2009
Great recipe, but I did alter it...I added two eggs, 1/3 cup melted butter, and my home-grown butternut squash (15 oz). Also, I skipped the cloves and added a tablespoon of ginger powder. These were so darn good that all 18 muffins were gone in 24 hours (I have teenagers who swim daily).

Definitely use the green food coloring and double the almond extract for better flavor. These were a BIG hit! I used pomagranate jelly to stick on the 'bloody nails' before baking. Big hit with the neighbor kids and Grandma, too!

Fresh Pumpkin Pie

Reviewed: Nov. 5, 2009
I made this with one of my butternut squash and it was fantastico!! Hot out of the oven with vanilla ice cream made it heavenly. I must add that I do not use crust, I just spray the baking dish with pam and pour in the filling. Less calories, less work!! My family gobbled this one up!

Blue Cheese and Walnut Wafers

Reviewed: Dec. 22, 2008
These were a major hit! I used a little more bleu cheese, a little less butter, and almonds instead of walnuts. They had to bake a longer, about 15 minutes. The taste was exceptional - nutty and delicious. We topped ours with a dollop of homemade hot pepper jelly.

These were a Thanksgiving sensation, and were very easy to make. I froze the filling ahead of time and made them immediately before guests arrived. Very good!

Turkey Brine

This made one excellent turkey! I cut the vegetable broth in half and used one bottle of white wine instead. I also added plenty of garlic. Very good recipe!

Holiday Green Beans

The family LOVED this recipe. I used pine nuts instead of peanuts (because my husband ate the peanuts the night before!). It was pretty, tasty, and perfect on the seasoning. Great small of garlic, too. Excellent recipe, thanks!!

Baked Whole Cauliflower

Reviewed: Nov. 26, 2005
Very good recipe, although I used 1 tsp of garlic powder for a large head of cauliflower, and I added 1/4 cup of olive oil (it was a big head!). There was none left over, and the aroma made the house smelled FANTASTIC!!!

Panettone I

Reviewed: Nov. 26, 2005
This was a fantastic recipe! I used 5 1/2 cups of flour, and instead of the dried raisins and currants I used candied fruit (fruit-cake fruit). It was the BEST recipe for Panettone I have ever had! Tante Grazie, que benissimo!
