Bean Soup With Kale
GREAT WITH HAM ADDED, TOO
This soup is hearty, and delicious! I will return to it again and again. It's easy and quick to make but tastes like a more complex recipe. I used 1 can of cannellini beans and 1 can of white beans. I didn't have fresh tomatoes on hand, so used canned diced tomatoes ("italian"--with garlic, oregano and basil.) I used 1 cup more kale, too--and added diced ham. I simmered without lid for 15 minutes, and with lid for 20 to better blend the flavors, and also added a dash of cayenne pepper.
