Black Bottom Cupcakes I

Amazing! I actually forgot to add the chocolate chips to the cream cheese filing so i sprinkled a few on right before they went in the oven but I thought they almost tasted too chocolately with the few I sprinkled on and took away from the awesome cream cheese filling. Next time I'll leave them out. Also, I was really nervous about there being not egg in the batter recipe (I guess I am just used to adding egg to all of my cake recipes). But don't worry it came out the perfect consistency. Also, for those show said the cream cheese amount is too much, I disagree. I thought you could even use more! Just my opinion. I'll def make these again, thanks for sharing :).

Butternut Squash Soup with Spinach Ravioli

3 as written. I did a lot of tweaking. First of all I added a lot more squash and reduced the amount of broth. 2nd I really didn't think this had much flavor. I added a lot more spice and even brown sugar. I guess I am used to sweeter butter nut squash. I also omitted the cream. After all of this tweaking it was pretty good and very filling! I didn't like the spinach ravioli but I might try regular next time. Will def make again with my revisions.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

This was awesome! Just a few notes though. I followed some of the other reviewers advice and marinated the steak in a merlot/beef broth/worcestire sauce/and seasonings marinade. I baked mine for 17 minutes and it came out medium rare. We like our steaks more medium so I'll do it longer next time. Also, the port wine "sauce" is more like a relish so I added mushrooms to mine. I loved the "sauce" but my boyfriend barely touched his saying the steak was good enough as is. I will def make this again!

Pumpkin Cheesecake Bars

I was a little dissapointed by this recipe. After letting mine cool and then putting them in the fridge the crust was rock hard the next day and extremely difficult to cut. I would recommend letting them cool, cutting them, THEN put them in the fridge. I also found them too rich for my taste but should be expected though all the condensed milk and cream cheese. Will try another recipe next time.

Beef and Bean Chimichangas

Made a few revisions. First, like many other reviewers I added a small can of tomato sauce and a packet of taco seasoning to the meat. Second, I added a spoonful of tomatoes and chilis on top of the meat mixture inside each chimichanga. Third I used whole wheat tortillas and sprayed the tops with Pam before sticking in the oven. Third, I sprinkled cheese on top of them with about 5 minutes to go. Easy and delicious! :)

4 as written. 5 with the following changes: - doubled sauce (except italian seasoning packet) - used chicken broth instead of wine - added 1/4 teaspoon cayenne powder to sauce - added 2 tablespoons of sugar to sauce - used egg noodles (or rice) instead of angel hair - add mushrooms to sauce when cooking - add cooked broccoli to sauce at end My boyfriend and I ate it all up.

Easy Italian Chicken II

Easy recipe but the chicken was a little dry. An hour is way too long. I cooked 2 breasts (cut in half) for 35 minutes and it was plenty long. Def poke with holes when marinating and add mushrooms. I also added all the marinade to the chicken while it was cooking so that we would have some sauce to pour over the chicken. It was all eaten and it is good for a fast midweek meal.

Feta Chicken

This recipe was ok. I added sun-dried tomatoes to the feta to give it a little more flavor but overall this recipe was nothing to write home about. WIll save it for an easy mid week meal here and there.

Chicken and Bowtie Pasta with Asiago Cream Sauce

This recipe was very good but was very time consuming. Instead of adding chicken to the recipe I used baked chicken breasts (dipped in egg and coated with Italian bread crumbs). I also added roasted red peppers to the sauce to add a kick.

Tree-Shaped Crescent Veggie Appetizers

I took this to a Christmas party and everyone LOVED it. I modified the sour cream/cream cheese mixture by adding 1/2 packet of ranch dressing mix to it and leaving out the dill and garlic. It really adds a nice flavor.

Cordon Bleu Chicken Rolls

Delicious and easy recipe. I followed the advice of others and used bread crumbs instead. I also used string cheese. I found the gravy to be a little thick so I added about 1/4 cup of milk to it. Maybe next time I will try white wine.

Baked Pork Chops I

I don't know what I did wrong but these came out extremely dry. I covered them and only put them in for 35 minutes and they still seemed tough and dry. The sauce was not that great either. Like a few of you said it tasted like I was eating chops with a can of soup poured on top. I had to throw out the leftovers :(

Waikiki Meatballs

so delicious! this is one of my favorite recipes. I also bake the meatballs to cut down on cooking time. Using a variety of colored peppers also adds a nice flair.
