About this Cook
I have always cooked and developed more quick (less than 30 min) recipes when a single Dad back in the 90's. Before Rachel Ray, who knew?. Now an empty nester and am collecting more simple food recipes. Oh yea, I make really great beers!!
My favorite things to cook
I cook with a lot of seafood, vegetables, grits, pasta, rice. I will cook with anything. I am trying to develope and learn more peasant, serf, county, basically poor peoples food. I have found to be able to take the less rich cuts and ingrediants and make those taste good is really cooking.
My cooking triumphs
1. Chicken-gizzard strogneoff 2. Cheesy, shrimpy grits. 3. Greens with hocks, hominy, okra and cornbread on the side. 4. Skewered shrimp, scallops and vegies maranated in a seseme oil, rice wine vinagar with red peppers on the grill. 5.Baked stuffed pasta shells with ricotta, spinch, brockli and shrimp in an alfredo sauce. Small children like a red sauce though, so I split the 9x13 pan in half or use 2 cake pans. 6. Braised stuffed beef heart slow baked.

Hearts and Gizzards (Giblets)
First off ya have to like gizzards. I do. This is good. My son home from college ate half of it watching football. A very good halftime snack.

Chicken Pot Pie III
You will love this for substitution. Had a pound of steamed shrimp in the fridge (go figure). Cream of mushroom and cream of brochli, can of VegAll. Only used half the cream of broch as it was pungent. Added tarragon, garlic. Oh yea no pie crusts. Had a pkg of cresent rolls. Rolled those out sticking them together. Actually covered the bottom and top. It was great.
