Quick and Easy 20-Minute Chicken Posole

This was great. Quick, easy and my husband loved it. I didn't have olives or green chilis, but I added a can of diced tomatoes and green chilis, four diced fresh jalapenos from my garden and more cumin.

Thai Pork with Peanut Sauce

This stuff was great. The hubs initially wrinkled up his nose when I suggested it, but he loved it. Like another reviewer, I used cream of coconut, about half the amount, since that is what hubs brought home. I doubled the sauce for the two chops we had and had a little left over. Used a little snack-pack of hot peanuts and one of honey-roasted peanuts. No cilantro and we didn't miss it. Added juice of half a lime. Served over lo mein-style noodles. We will be having this again. Yum.

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

My husband said it WAS the best blue cheese dressing he'd ever had. It was wonderful on a big salad with lettuce, onion, tomato, red pepper, chicken, bacon and hard-cooked egg.

Creamy Italian Dressing I

I picked this recipe for my daughter since creamy Italian is her fave. I added a little onion powder, parm cheese and red pepper. My husband said it was the best dressing he'd ever tasted. My daughter took one bite and said we'd never need to buy dressing again. This is a keeper.

Favorite Old Fashioned Gingerbread

Tasty, tender and fragrant. A little too much for my pan, it overflowed. Luckily, I had put a cookie sheet underneath. Even what ended up on the cookie sheet was tasty.

Chocolate Lover's Cheesecake

Big Soft Ginger Cookies

These cookies were very popular. Soft and chewy. The dough is very sticky so I made it up and put in the fridge overnight. They spread out a lot so after the first sheet I learned to give them their space.

Peanut Beef Stir-Fry

Wow, this was really good! I used chunky peanut butter, a bit more than it called for, substituted beef bouillion dissolved in water, added red pepper flakes and threw in a half bag of frozen snap peas veggie mix. Served with noodles (thin spaghetti). YUM!

Perfect Sesame Chicken

This was just what I was looking for! I love sesame chicken. The chicken by itself was great and there was plenty of sauce. I didn't have chile paste, so I used some red pepper flakes. YUM!
