Ethiopian Cabbage Dish

Very good! My husband's first words when finished with dinner was - you can make this again! Followed advice of others and doubled the spices. I used my Vidalia Chop Wizard to dice the onions, carrots and potatoes so prep time was very quick. As we are vegetarians, next time will add garbanzo beans for a protein. Ate this with Injera Bread - very tasty!

Avocado Tacos

This recipe has fast become a favorite of ours, I have made it 3 times now since I found on the site. I have utilized some of the tips from other members. I add lime juice, garlic powder, cumin and 1/2 can of mild chili peppers to the avocado and the other 1/2 of can to vegetarian refried beans. I heat the shells over a flame on the stove, then stack like a taco with beans, avocado mix, fresh cilantro, tomatoes, onions, black olives, lettuce and ranch dressing or hot sauce. My husband asks for these weekly! Quite a suprise since his first response was very questionable. Easy to make for a quick and easy dinner!

Cream of Fresh Asparagus Soup II

Wonderful! Easy! Tastes like you are at a 5-Star restaurant with the soup course being served. This was rich and delicious - my husband asked me to go out and buy more asparagus to make again - and he was scared to eat this bright green soup! He loved it! Will make this again soon!

Mouth-Watering Stuffed Mushrooms

These were delicious!! Fairly easy to make. I used a ziplock baggy with the end cut off and piped the cheese mixture into the mushroom caps. For a bit of zing, I added dill weed - otherwise made according to recipe. I would make again!

Three Cheese Manicotti II

This recipe was very good and quite easy to make! I followed the advice of several other reviewers and stuffed the shells while they were still hard using a ziplock baggy with the corner cut off (next time I will cut a smaller piece). This made the filling of the shells so very easy. I put sauce on the bottom of the pan, then the shells. I poured about a cup of water over the shells, making sure each shell had gotten watered, then put the rest of the sauce over it all. Baked about 1 and 15 minutes. Husband loved it! So did I! Will make again.

Sausage Smothered in Red Cabbage

This was a wonderful treat! I was a bit afraid at first and wondered what my fussy husband would say - he loved it and wants me to make again soon! Only lessened the amount of salt due to our tastes, otherwise great as written!

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

My husband, who does not like soup, loved this soup!! I have made twice now in the past couple of weeks as I had an abundance of cauliflower. The first time according to directions, the second as a vegetarian alternative (no chicken broth or bouillon) This is delicious - tweaked a bit due to other reviews, specifically blending everything to get a thicker texture of soup. Will pass along to others and make again and again! Thank you!
