Easy Shake and Bake Chicken
This is an easy way to shake up some tender chicken. I make it with a healthy twist though. I substitute olive oil for the butter and "Just Almond Meal" (from Trader Joe's) for the flour. I also dip the chicken in a little egg whites which helps the almond meal stick better.

Bacon Wrapped Dates Stuffed with Blue Cheese
These are sooo good! 1 pound of bacon cut in half gave me 24 strips so therefore only made 24 servings versus the 32 listed. I stuffed them with goat cheese instead of blue and they were yummy.

Garlic Prime Rib
Awesome! So easy and so good. The oven really started smoking after 10 minutes at 500 degrees but I waited it out! I put a thermometer in the meat and cooked it at 325 until it hit 140. It took a little longer then 75 minutes.
