Quinoa and Black Beans

Didn't have quinoa, so I used bulgar wheat. I used fresh corn off the cob-raw and had only a little cilantro in my garden so I added oregano and thyme. Also added fresh tomato chunks. This was fantastic. Used as a main dish meal and it felt so good and healthy! Delicious flavor!

Five Flavor Pound Cake II

Very good cake, extremely moist. I followed the directions exactly. A couple things should have been mentioned in the recipe. First, you cannot fit all batter into a bundt pan-it almost overflowed and when flipped onto a platter it didn't look as good because it had baked out of the pan and looked flat and odd shaped on the bottom. So, do not use all batter for this cake. Secondly, it didn't say to let it sit for 10 minutes or so before you flip and glaze. A hot cake cannot come right out of the pan. Let it sit for awhile and then glaze it. If you want to fit all of the glaze on you will have to brush it on until it all soaks in. Great flavor overall. The texture seemed a little too soft to cut nice.

Chorizo Stuffed Bell Peppers

These were terrific! I made a couple of adjustments based on other reviews. I added 1 lb ground venison; used the tops of bell peppers and minced them and added; instead of just rice, I used a box of Jambalya Zatarains I had on hand and I used a mexican cheese blend. This dish really has complex, interesting, international flavor. Excellent! Thanks for a new fav!

Cinnamon, Spice and Everything Nice Cookies

Nice cookie. I used mostly butter and 1/4 of the shortening, otherwise followed exactly. My non-spice hubby says that they are pretty good, that's a compliment. I think they are a bit too sweet, otherwise very good. My kids loved them.

Impossible Buttermilk Pie

Made two for Thanksgiving. It was wonderful just as it is! I was leary about making a buttermilk pie, but it's a keeper. I did put it in a crust and it took quite a bit longer to bake. Good cool or room temp. Served with raspberries and homemade whipped cream. I also made my own baking mix from scratch, as I don't buy that. Wonderful pie!

Chocolate Honey Cakes with Mocha Cream Sauce

A good, moist chocolate cake. The sauce makes it more special, but for the effort put towards the recipe, there are easier great cakes out there. Couldn't taste the honey. Very chocolatey, but lacked stardom.

This is a great fast recipe. Kids loved it, too. I added more garlic, salt and pepper, pesto, and cheese. I liked using cream and chicken broth to reduce the fat.

Green Bean Fries

These were very good. My kids didn't even complain once and ate them all. I would add some salt to the dry mixture as the salt doesn't stick that great after they are fried. These are putsy but a good use for an abundance of produce and at least you get to eat your veggies, even if they're fried.

Kai Kang Dang (Chicken Curry with Coconut Milk)

I can't say this is a totally fair rating. I didn't have all the coconut milk I needed, so I sub. chix broth and some water. I don't know if more coconut milk would've made it thicker but it was more like soup so I added corn starch to make a "gravy". I also didn't have red curry paste so I used my green. I used snow peas and yellow bell pepper. It had a good taste but not great. We ended up adding peanut butter and chili sauce to our individual servings. Maybe someone else will have better luck following the directions completely. Thanks, it was interesting!

Crispy and Creamy Doughnuts

I combined what other users have said and came up with great results the first time. First I scalded the milk. Then I reduced yeast to 4 tsp and proofed it with a tsp sugar. I used 3/4 cup sugar, 2 tsp salt and used bread flour with maybe 1/2-3/4 cup more so it wasn't quite as sticky. The dough tasted very good and flavorful! For the first rise I put the bowl in a warm oven. I used a glass to cut them out and then used my apple corer to cut the middles. The only thing I wished I'd done is put the cut out donut dough on trays in a warm oven. Instead I put them on the cupboard and they just didn't rise so we ended up cooking them the next morning and they still weren't quite high enough but it didn't pose a problem. 350 degrees was a touch too hot, they browned in seconds, so the more the oil cooled the better they turned out (no "burning"). I made some glazed, sugared and then bismarks. The whole family loves them and they were great!

Sweet-Sour Beef

This just wasn't what I expected. I was thinking more of the chinese style sweet and sour. It was too molassesy for me. I did take some short cuts and so this may have jeopardized the flavor a bit, so anyone thinking about this recipe, give it a chance and see if it works well for you. It wasn't bad, just not great.

Coconut Carrot Casserole

4.5 stars. This was a great way to use up some carrots in the freezer. I brought it to a potluck, so I missed getting people's response, but the dish was gone, so it must have been a crowd pleaser. The topping made it satisying. The coconut is a nice addition although it did seem to get lost in the flavor a bit.

Zucchini Yogurt Multigrain Muffins

Wonderful! Very versatile recipe. I used less white and more wheat. Added bran flakes, wheat germ, pumpkin-flavored yogurt, less honey and they were great! kids liked them too. It's so nice to have a snack around you don't have to say "no" to for the kids.

Whole Grain Waffles

Exceptional! To make & serve something healthy that my whole family loves is very satisfying. I made a few changes. I used buttermilk, ww flour, replaced some flour with cornstarch for more crispy waffles, doubled the recipe but not the baking powder, separated the eggs and folded in the whites at the end and much to our delight used a belgian waffle maker-they turned out wonderful! Loved these-better than any recipe we've tried!

Tuna Noodle Casserole from Scratch

Excellent dish, especially on a chilly night. I followed recipe with only minor variation, using small shell pasta, chopped mushrooms finely so that my kids didn't find them, used corn flakes for the topping. I added s & p, seasoned salt, and parmesan to the rue, that made it really good and creamy! The kids really liked this recipe and it's so much better knowing all the chemicals aren't in it!! Thank you!
