Pork Roast With The World's Best Pork Loin Rub

Reviewed: May 16, 2011
Made this for 170 people. They raved! Made minor adjustments for maximum flavor - can tweak to how you want it. Added more cumin, mustard, thyme and garlic and also added fresh minced garlic (a must). Used less heat ingredients to allow children to enjoy. It's essential to get that crust on the meat by searing your meat if you are not grilling. Made some without that (accidently), and it just wasn't as good. Absolutely fantastic! Thanks for a new go to recipe!

Caramelized Chicken Wings

If I could give this more stars I would - thank you Shannon!! This was absolutely fantastic!!! No changes needed. This recipe is so much easier than a similar chinese one I have, but it doesn't take over 2 hours to bake and turn and I LOVE that I don't have to take the time to marinate!!! We all loved it and I'm making it another time this week - but tonight I'll used boneless thighs. I hope others discover and use this recipe!

Nanaimo Bars III

Reviewed: Apr. 18, 2011
Hubby says they are TOOO good! That's good! Guess we'll make them lots. After reading reviews and making I have some recommendations. I did not have an issue with the eggs curdling, maybe because my double boiled mixture was not overly hot. Perhaps the coconut could be reduced to 3/4 C next time. But my non-coconut friends even liked these. We do not have custard powder around SO...I did some research and I was pleased with how they turned out. DO NOT USE VANILLA pudding. Custard powder is NOT pudding. Simply substitute 2 TBSP of cornstarch and vanilla. I had vanilla powder, so I used a tsp of that. I also only used one cup of p. sugar. It was the right sweetness but I wish there was a little more of that layer, so next time I might try two cups of p. sugar, if that is too sweet, than I will add another stick of butter to increase volume. Used semi-sweet chips for topping. Turned out beautifully! Can't wait to make these when it's too hot this summer to bake.

Unbelievable Chicken

WOW! All I can say is that I wanted to drink this marinade it was sooo good. I inadvertantly forgot to add the lemon juice, but it was great anyway. I was only to marinade for 7 hours and it was still infused with flavor. Excellent recipe - my new favorite!

A delightful combination! It has very good flavor and texture. The whole family enjoyed. I also did not drain the beans. I had mixed it up several hours ahead and it soaked in the flavor. A healthy, delicious side!

This is and feels so healthy and good to eat. I had garden fresh frozen corn so I used that and cooked my own black beans. Also used more lime juice as others recommended.

I only had white chocolate pudding, graham crackers and heavy whipping cream. So I made the graham crust with coconut for a little something special. This is a hit with everyone - you can't go wrong.

Flan II

Reviewed: Mar. 22, 2011
This was an easy recipe and it looked great when I turned it out. I doubled the recipe and added orange zest, juice and a little almond extract to put a twist on it, but even so we all thought it was bland. It needs to be a bit sweeter and I possible may have had the sugar a little too dark. I might try this again.

Monster Cookies I

Reviewed: Feb. 8, 2011
Everyone is raving about them and talking about the next time I bake them. I halved the recipe and added M & M's, toffee bits, and butterscotch chips. Used chunky peanut butter and that gave them great texture as well. Thought they'd flatten more, so I pressed them down before baking. Great cookie compromise for hubby and I - he likes chewy and I like crunchy. Great cookie!

Wild Rice Pancakes

Reviewed: Oct. 27, 2010
These were good, but nothing to write home about. I have had more flavorful pancakes, although the nutmeg was nice. I followed the recipe exactly. Just a plain kind of pancake, we had them for supper but I love that they have the nutrition from this native grass of our state-WI. Also, the rice called for is not cooked as mentioned in the previous review. The ratio for wild rice is usually 4 to one, depending on how much of the hull is removed during processing. So start with 1 1/4 cups of raw wild rice.

This was a party in your mouth! We used it as a side dish alongside chicken. We didn't have fresh lemon juice, so we used it from a bottle, but boy was it fantastic. We wouldn't change a thing.

Fresh Tomato Pie

Reviewed: Sep. 16, 2010
This is a great way to use up a bunch of tomatoes. It was fun to see the kids' reaction to having tomato pie. They didn't want to try it but did and finished it all. You definitely need all three layers in each bite. It is a good combo! I did cook onions ahead of time as suggested, I may even cook tomatoes a bit too to try to get some liquid out. Used some Romano cheese too. I bet that putting some fresh garlic in the cheese mixture would be delicious. It doesn't state what kind of tomatoes to use, I used a combo of what I had. Roma tomatoes will be less runny than the standard beefy tomatoes. Great recipe.

Fried Morel Mushrooms

Reviewed: May 11, 2010
The recipe as stated has some issues. First, you must soak these mushrooms in salt water. Even after doing that I still had some critters that were holding tight. They are not like button mushrooms that soak up water, brushing won't work with these. I used the spray nozzle on faucet to really get them and sand out. Drained well. Next, like all the others you must use butter with morels. I know, it killed me to use 3-4 sticks to fry these - my heart was cringing! Thank the Lord they only grow in the spring and we enjoy them only once. I use saltines for fish frying, but I had Bisquick (which I don't normally use) so I thought I'd try that. I found after trying both methods (first dipping in milk/egg and then mix and then combining all together like a batter) I liked how they turned out with the batter instead. Then the mix doesn't clump on the morels and is more evenly coated. Add the seasoning along with a little garlic salt to the baking mix.

Fluffy Seven-Minute Frosting

Reviewed: May 10, 2010
Please try this as a FILLING! :) Used this for filling between cake layers. Made exactly as stated only adding coconut extract for flavor. Turned out perfect. Not necessary to use corn syrup. You must follow the preparation as stated to turn out - no short cuts. You really can't go wrong by following the directions to a "T". Good filling! I'm going to make it again to fill chocolate cupcakes with chocolate glaze - homemade Hostess cupcakes.

Chicken and Spinach Alfredo Lasagna

Reviewed: Mar. 8, 2010
This was excellent. I didn't have ricotta so I just added cream cheese to the sauce. I also didn't have mushrooms. The only problem with this rich dish is that it was greasy in the bottom of the dish from all the fat, even though I used reduced fat cream cheese. All the same, it's still delicious!

World's Best Lasagna

Reviewed: Mar. 8, 2010
Wonderful lasagna! The flavor was outstanding! Definitely the best recipe I have made. I did not have any fennel, and I used cottage cheese because it is what I had on hand, venison burger for the ground beef. I also used homemade pesto for the basil leaves and added a couple tablespoons more of sugar. The sweet Italian sausage is what I think gave it such great flavor. I had never doubled up on the pasta like that before and I was a little nervous that it would be too "pasta-ee" but it wasn't and the guys really were satisfied with a smaller portion.

Smashed Sweet Potatoes

Great dish! I loved the addition of the orange flavor and zest in sweet potatoes! No bourbon and don't need marshmallows - it's sweet enough. Maybe candied pecans on top would give it a nice crunch?

Sausage Egg Squares

Reviewed: Jan. 30, 2010
Eggcellent recipe! I don't use anything artificial so I used real eggs. Also, the only thing differently I did was use all regular ingredients - not low-fat varieties. Although I may try this even though those things aren't in my house. I used Italian sausage (looked like bratwurst because I thought it would be easier and more cost efficient. My hubby didn't realize the casing was supposed to come off, and it really didn't make any difference to have them cooked in there. I added a few shakes of red pepper flakes and some pepper, otherwise exactly as written. My kids also loved this.
