About this Cook
I've lived in the cooking shadows of my mom and brother- they cook very well, so I never thought I could. I could make killer dips, people would ask for them (my Spinach Dip is legendary!) but I thought that would be the extent of it. Until I met my fiance! I LOVE cooking for him, and he LOVES my food- thinks I cook better than my mom and brother... (sshhhh :) )
My favorite things to cook
Oh gosh, where to start... I've been on a salad kick lately- homemade dressings, really elaborate salads. I LOVE Southern and Italian Cuisine, homemade soups... I love cooking anything from scratch.
My cooking tragedies
When I first started trying to cook on my own, YEARS ago, I didn't realize that glass baking dished could not go in the broiler. I had 4 shark steaks in the oven, and the entire dish EXPLODED. That was fun.

Garden-Fresh Bruschetta
This was simple and delicious. Of course I added some changes because that's what I do :) But my hubby BEGGED me to make it the very next night just for him (the first night was for a dinner party). I added balsamic vinegar to the mix- it needs a bite to it. Not too much though, just to taste. I also brushed each side of the bread slices with melted butter and sprinkled with garlic powder. I added A LOT more than the called amount of fresh basil, and covered all of the pieces with fresh shaved parmesan. Looks so nice and tastes even better!

Baked Chicken and Brie
This was so surprisingly elegant for how simple it was to make. I made this for a dinner party and it got rave reviews! I used Italian Seasoning instead of only Oregano, and when I put the Brie on the chicken, I placed a large fresh basil leaf under each piece. DELICIOUS! Great presentation too!

Italian Style Pork Chops
I got this recipe MAYBE 2 weeks ago, and I can't even count how many times we've eaten it so far!! A definite staple in my house now. I tweak EVERY recipe I've ever come across to my family's taste, but the only thing I did to this one was pour the leftover melted butter in the pan between all of the chops. YUMMMM!
