Southwestern Egg Rolls
so good! i omitted the chicken as i am a vegetarian and actually forgot to pick up spinach so added extra beans and corn. i also baked instead of fried them (350 for about 25 mins) and they were heavenly. served them at a party with ranch dressing and they were gone within minutes.
