Sour Cream Burgers

these burgers melt in your mouth! so tender and juicy. we had ours on sliced and broiled olive bread with just a touch of dijon mustard. simple and fabulous. i can imagine adding some bright flavor like diced green chiles. really whatever you like. however, this will be my base recipe from now on for sure.

No Bake Cookies V

oops! i forgot the margarine and i used rolled oats instead of quick cooking. no one in my house seemed to care. both kids and adults scarfed them up. great treat for a 'hot' bay area day (98 degrees).

Chuck's Favorite Mac and Cheese

whoa, be careful! this stuff rocks. there is a seriously high sauce to pasta ratio. i don't think i have ever put that much cheese in any one dish. i think next time i will use regular cheddar instead of sharp. i think that would make it more kid friendly. however, i must say that this was the first homemade mac and cheese that my son actually liked. he usually prefers the boxed stuff! i had to quickly put the leftovers away after dinner. i could not stop picking at it and i was going to make my self ill. this will rock the house at the next potluck i go to.

Oatmeal Whole Wheat Quick Bread

very good. i had to add an additional 1/2 cup of flour. it was way too soupy. i also baked it in a loaf pan. "mo mo, peez" was what my two year old had to say about it (more please). awesome with butter and honey the next morning! i can see why some people might think it's too plain. you have to appreciate the flavor of the oat and wheat, as that is what shines through. perfect for me and my family. oh, it is crumbly to slice right after baking. however, the next day it slices much better.

Graham Cracker Bars

Whoa, these rock! I used a mix of regular and chocolate graham crackers. I also sprinkled semi sweet chocolate chips on top after baking. I put it back in the oven for just a few minutes and used an offset spatula to spread the melted chocolate. It looked great and tasted better. I made them for a staff appreciation lunch at my son's school. Everyone loved them. It's a great recipe to make with the kids too. Yummy!

Sweet-Potato Muffins

These were good. I replaced the oil with applesauce and the raisins with dried apple. I could see the swirls from the sweet potato, but could not detect them otherwise. These are hearty muffins, no fluff. They are healthy enough to be an on the go breakfast for me and the kids.

Pizza Casserole

This was good. I like how versatile it can be. If you have individual sized baking dishes, everyone can have their own favorite pizza casserole. I will be making this again with different 'toppings' for fun.

Cake Balls

awesome. everyone loved them. i made the cake and frosting from scratch. i just can't stand how sweet the box mixes are. that added a bit more work to it, but it was well worth it. i made chocolate cake and cream cheese frosting. next time i want to try a strawberry cake and cream cheese frosting. i had never heard of cake balls until a few weeks ago. now i'm pretty sure they will be a part of just about any celebration from now on.

Chocolate Pudding Cake II

super yummy. you can make this recipe without the oil and replace the milk with water. that way it is fat free and vegan. you'd never know it. it's so rich and comforting. it's not really pretty. so, i would not serve it at a dinner party. however, it's a great family recipe. the kids feel like they are getting a real treat! and well, me too :)

Healthier Graham Cracker Crust

easy to make and tasty. my only complaint is that it never gets crispy and gets kind of mushy the next day. i'm guessing that is due to the lack of butter. oh well. you can't have it all :)

Artichoke and Spinach Swirls

These came out so pretty. I made them for a holiday party and was so proud to show up with them. They were very tasty too. I got 30 out of the recipe, but only 28 made it to the party :) I had to use my sharpest knife and be careful to cut them 1/2 inch. I did pinch the seam together well before slicing and they stayed together just fine. Next week I am going to another gathering and I will bring these too. I am going to do a mushroom artichoke goat cheese filling. I think you can get as creative as you want with these. What fun!

Seafood Lasagna II

Very, very rich. This was the cheesiest lasagna I've ever eaten. Prep time was not too bad. I went with bay scallops and baby langustino tails. Yummy. I made mine the night before. It came out great. The only thing I was confused about was how on earth all those ingredients would fit into one 9x13 dish. I used only two pounds of seafood, 2/3 a package of noodles and one jar of sauce and it fit just fine. At any rate my husband loved it for his b-day dinner and so did our seafood lovin' 5 year old.

Shortbread Supreme

You can't ask for a dough to come together any faster. However, I tried using cold butter like another reviewer suggested. I'm not sure how that would ever work. I just ended up flinging tiny cubes of butter all over my counter. No problem, I just put the whole bowl in the microwave for 20 seconds. Then it fluffed up just fine. I added the zest of two lemons and 1 teaspoon of lemon extract. After baking just until they barely started to brown on the bottom, I put them face down in powered sugar while still hot. That melts on a thin layer of the sugar. I think they look nice that way, taste fantastic and I think it helps keep them soft. Who doesn't love a tastey recipe with only 3 ingredients! For those who think they come out plain, think of them as a blank canvas. Add what sounds good to you. Next time I think I'll do a cinnamon pecan shortbread. Yum.

Pizza Muffins

Delicious! All my boys munched these down, 17 months, 5 years and 40 years (husband). It may have just been 4 stars, but I gave it 5 because of the versatility. You can vary the 'pizza topping' ingredients all you want. I did replace some of the white flour with white whole wheat and cornmeal like others suggested. The texture was great. Next time I make these I will make a kid batch and an adult batch. Then I can add garlic and onions and pepper flakes! Oh my.

Zucchini Brownies

Wow! These absolutely rocked! I made them for my son's Kindergarten class Halloween party. The kids loved them and they had no idea there was a vegetable lurking in them. All the parents were whispering about how good 'zucchini brownies' could be and all wanted the recipe. The batter does look a bit crazy, but the end result is awesome. Mine were super moist and fudgy, not cake like at all. Oh, and I ended up using white whole wheat flour because it was all I had. That was the only modification I made.

Indian Chapati Bread

These were very easy and quick to make. I made the dough and formed the balls to rest while I cooked my Cholay. When everything else was done I rolled them out and grilled them on a very hot cast iron pan. They were so tender! I then melted a little butter with garlic and a pinch of Indian red chile powder and brushed the finished chapati. This meal was almost as good as my local chat restaurant!

Slow Cooker Beef Stroganoff I

Fantastic, simply the best stroganoff I have ever had. I used many of 'JillyBean's recommendations. The leftovers rocked just the same. I really liked mine served over white rice. It was very homey, comforting and filling. I can't wait to make it again.

Delicious Raspberry Oatmeal Cookie Bars

Oatmeal Cookie Bars for breakfast! Why not :) They actually remind me of a healthier homemade 'toaster pastry'. I did do a lighten up makeover on the recipe. I replaced the butter with 2 TBS. of margarine, 1/4 cup apple sauce and 1 egg white. I also cut the sugar by half and used white whole wheat flour. That brought these little cuties down to 2 points each. I then followed another reviewer's suggestion and baked the bottom crust for 7 minutes, topped it with the jam and the rest of the dough and baked for another 25 minutes- perfect! I can't wait to try different jams. Today I used blueberry, yum! Have fun with it! UPDATE: I remembered to put lemon zest on top of the jam in my last batch, another reviewer suggested it. Fabulous! It brightens up the flavor with a subtle contrast.
