Sue's Taco Salad
This can be as simple as you want it to be or you can get really creative. I made a homemade ranch dressing with fresh minced cilantro in it. I chopped a large variety of ingredients and let my kids pick what they wanted. Everyone was moaning with delight at the dinner table! My 4 year old said it was the bestest dinner ever! For the "meat" I used veggie beef strips that made it instantly vegetarian. Mmmmm, we are gonna eat this all summer!

Layered Mint Chocolate Fudge
This was pretty good tasting and the texture was nice. It was not very easy to work with though. I had to pat down each of the chocolate layers with my hands. i would have never gotten it to smooth out otherwise. Everyone who had some loved it though! UPDATE: The second batch was perfect to work with. I did the melting in the microwave, slowly. I think the first batch got too hot on the stove!

Chocolate Oatmeal Cookies
perfect! the best oatmeal cookie i have ever made. i made my cocoa tablespoons heaping and used white whole wheat instead of all purpose. i only had 6 tablespoons of butter for one batch i made. they came out great too!
