I love to bake and I cook because I have to! I do a fairly good job of cooking meals but unlike baking it is not a labor of love.

Alaska Salmon Bake with Pecan Crunch Coating
This was really great! We are big on Salmon in my house and my normal routine is baking salmon with a sweet raspberry chipotle sauce, because I prepared it the night b4 for myself I was searching for a quick new way to prepare it for them and found this recipe. I had all the ingredients in my cabinet and rather than regular dijon mustard I has a honey dijon blend on hand. I used that using the specified amount of honey and all things remained unchanged. I didn't have time to refrigerate it but it baked up nicely! my family loved it and even the fickle ones asked for 2nds and 3rds. I went back for more myself!

Crumb-Coated Chicken Thighs
This recipe has ease of use with tasty results!I didn't have cumin and I sprinkled original flavor Mrs. Dash seasoning on both sides of the chicken. Tasted great and my family loved it.

Creole Cornbread Stuffing
I really loved this recipe, I tweaked it by using a pinch of cayenne pepper and I was a cup short with the buttermilk so I substituted reg. milk by adding a Tbsp of fresh lemon to sour it. I can easily see myself creating a variation with turkey meat. The cornbread portion of the recipe was good solo as well it was a nice change from the sweet cakelike cornbread I've been eating all these years
