Pumpkin Parfait

I almost never give a bad review, but this REALLY was really bad. It was runny. It never did set. It was no where near sweet enough. It also didn't have enough spice. Maybe a second box of pudding would have made the difference in both sweetness and the problem setting.

Aggression ( Oatmeal ) Cookies

I've made these since I was a kid. Never get around to cooking them though... They only ever get eaten raw. As there are no raw eggs, they are good for that purpose. Since I don't bake them, I just omit the baking soda.

Pineapple Chicken Delight

The chicken was very moist and fell apart. The flavor profile was not to our liking. Almost a creole flavor. Maybe I used the wrong barbeque sauce. There are so many variants on the market maybe more specific guidance would be helpful. This was only OK...

Mint Buttercream Frosting With Dark Chocolate Glaze

Best frosting ever! I think I'll make a batch and turn them into peppermint patties by making the frosting a bit thick, shaping them, and dipping in a double or triple batch of the glaze. Couple of minor changes. First I used 1/4 the amount of peppermint extract called for as I use candy making peppermint oil. I also doubled the glaze and added 1/4 c powdered sugar (could've used a bit more). I used this to frost the "Too Much Chocolate Cake" on this site. BIG HIT!

Beef or Chicken Enchiladas

This was a sound "starter" recipe. I used leftover Ropa Vieja (also from this site) for the beef in the filling. Had I used a beef that was less seasoned it would have been bland. It was close to bland even with this beef. I think if I made it again, I'd double or triple the garlic and cumin. Other than that, it was fanstastic.

Chicken Gravy

Ingredients matter! If you use good, quality stock then this will be awesome. If you use cheap stock it won't be any good. I tripled it and used it for chicken biscuits and gravy. I didn't have stock, but used 1T of chicken base and 1T of vegetable base for 6 cups of liquid. (use 1t of each for the original recipe). I also added a bit of garlic powder and dissolved the corn starch in 1C of milk. I used 5 cups water only, which combined with the milk made 6 cups liquid.

Punjabi Sukha Urad Dal

This was absolutely delicious! Even my picky eaters loved it. My only change was to use two hungarian green peppers (less hot than other peppers) because my girls don't like it too spicy. I also made my own Garam Masala blend (2 teaspoon ginger, 1 teaspoon cinnamon, 2 teaspoon black pepper, 3 teaspoon ground cumin, 3 teaspoon ground coriander, and 1/2 teaspoon ground nutmeg, 1 teaspoon ground cloves). Mix those well and use amount called for in recipe.

Spicy Chicken Enchiladas

This is an awesome recipe! I use the "Ten Minute Enchilada" sauce recipe from this site, but I modify THAT recipe by adding 1/2 small can of tomato paste, 1 ounce of dark chocolate, and trading chicken broth for the water. The modified enchilada sauce gives this recipe a really "authentic" flavor I enjoy.

Yogurt Chocolate Cake

Really REALLY dry cake. The cake was NOT sweet either. To top it off, the icing was extremely bitter and I'm a HUGE dark chocolate fan. Will only try again with more sugar and milk in cake batter and semi sweet chocolate in the icing. What a disappointment.

Tarragon-Turkey Soup

No Bake Peanut Butter Cookies I

This has been a classic in my house for years. For those who's cookies didn't harden, try them again. They need to be "dryish" not super gloppy when you put them on the waxed paper. If they are too wet, just add 1/4 cup or so more oats. I always use regular oatmeal, never quick cook as they seem to absorb more moisture and I don't usually have consistency issues. The sugar can be cut back just a bit too, if you find them too sweet.

Quick and Easy Brownies

Condensed Soup Mix

Very awesome alternative when you are out of "cream of" soup. Tastes just the same in a recipe. I prefer it without the basil as it doesn't go in some recipes. Use 1/2 the water if you are using it to replace a canned soup in a recipe.

Kitty Litter Cake

I read many reviews and was hesitant to make the cake as stated in the recipe. I decided to try it "as written" and was thrilled with the results. I loved how the crumbled cake looked litter-like. I didn't add as much pudding as the recipe called for as I had very moist cakes to begin with. The kids LOVED it! After the "eeeewwwww" they all scarfed it down.

Fluffy Peanut Butter Frosting

WOW! I used Kroger brand creamy peanut butter and Kroger brand butter. Creamed them together and they were light and fluffy. I added sugar a bit at a time. I then added milk as instructed. SUPER creamy. SUPER fluffy. Great taste. It was also as spreadable as any icing I've ever used. Oh, and I used a hand mixer. I normally hand beat/whip EVERYTHING, but this recipe really needs the extra horsepower.

Hasty Chocolate Pudding

Wow - The ones who didn't like this must have either had bad ingredients, followed the recipe wrong, or have never made homemade pudding before. This is phenominal! I followed the recipe to a "T" and it was perfect!

Blueberry Crisp II

Wow - getting all of my picky family to agree is quite a feat! Thanks! I did have to use 1/2 apples and 1/2 blueberries as the blueberries are just too expensive. It was still wonderful. The crisp part doesn't brown or get really crispy, but it definately tastes more like a crisp than a cobbler. I'll be making this again.

Chicken Stir-Fry

Awesome just as is! Also, it is very easy to add more vegetables to stretch your money. Next time, I think I'll make a second batch of maranade to put the veggies in. That way they will have just a bit more flavor.
