Black Beans and Rice
I used this as a base recipe, in a crockpot I put 2 can's black beans, half a chopped onion, leftover corn salsa, cumin and minced garlic. Cooked it on low for about 2 1/2 hrs. Yum! Delicious. I served with yellow rice.
