Buttery Cupcakes with Coconut Topping

These were only ok for me. I did halve the recipe as it was just for my husband & I and we don't need to have 12 cupcakes around :) but I did it exactly in half (the site calculates it for you) and they turned out rather dry. I felt more like I was eating a muffin than a cupcake. The topping was interesting but again seemed like a muffin topping instead of a frosting. You do have to be careful with the broiling- I did not spread to the edges as directed, thinking it would spread itself under the heat, but it did not, and a few did turn dark in that area, so I would advice spreading it out to cover the whole thing.

Bavarian Strawberry Pie

Really enjoyed this! I have been on a mission to replicate a creamy strawberry pie that I grew up eating at a local restaurant & while this is not exactly it, it is closer than I've come yet. I love coconut so the super easy crust was right up my alley & it was all very easy to make. My only issue was that the strawberries released a lot of water when they sat with the sugar and then when I added the water/gelatin mix there just seemed to be SO much liquid that I poured about half off before folding in the cream. I'm not really sure how differently it would've turned out if I kept all the liquid but it was great regardless, my guests all really liked it. I do wish the strawberry measurement was in weight instead of volume though I ended up just using about 1 lb of strawberries.

Peanut Butter Easter Eggs

I halved this recipe & not sure if that was where the problem was, but many things did not work out for me... I added the sugar gradually, thank goodness b/c halfway through the sugar, the mixture turned very crumbly & when I tasted it, it was good but almost too sweet &I knew I couldn't add any more. It was still sticky enough to roll into eggs but just barely. I used semisweet chips & they did not melt well- unfortunately I did not have shortening & subbed butter b/c I thought that would smooth it out but I added nearly 3 tbsp (to only 4 oz choc) and it still was not smooth or 'dippable', so I ended up having to smear it onto my eggs w/ a mini spatula & my hands. They were not pretty at all, good thing it was just for me & my husband. But, they did taste good when all was said & done. Next time, I'd cut down on sugar and use the chocolate that is made for candy making.

Crustless Spinach Quiche

Very good & super easy. Used a cheddar/jack mix just b/c I had a bag of the pre-shredded, so I think that it was less than 3 cups also. I will definitely make again & am freezing half of it so I'm interested to see how it does with freezing!

Pumpkin Apple Streusel Muffins

Really good! I agree with others that the streusel might not be needed since they're pretty sweet to begin with. I would sub applesauce for the oil next time, possibly cut back on the sugar in the muffin mix & maybe even add some chopped nuts. I misread the directions & used the whole can of pumpkin instead of just one cup & thought they turned out great- maybe more pumpkiny than they were supposed to be, I don't know!

Zippy Chicken Corn Chowder

We really enjoyed this & will make it again but I can't say it blew me away. I stuck to recipe but did add more broth, somewhere between 5 & 6 cups total. Served with a side salad & some crusty bread, great on a cold fall/winter day!

Blueberries n' Cheese Squares

This was yummy & a hit with our friends! I used frozen bluberries that I simmered w/ some sugar & corn starch instead of pie filling, so probably it was not as blueberry-y as the original recipe. I took the advice of others & did a 1 1/2 batch of the cream cheese, which was definitely a good idea. Future ideas might be to spray the pan before putting down the crust (or add more butter to crumbs as others mentioned), as I had a little trouble getting it out & it fell apart, also could use cool whip instead of whipping the cream yourself to save time & also possibly hold the shape better. I will definitely make again!

Spicy Garlic and Pepper Shrimp

We really enjoyed this, but like others, made some changes from the original recipe, which is why I only gave it 4 stars. It seemed like it would need some additional flavor (and sauce), so at the end, I added a couple tsp of sesame oil and fish sauce & a little powdered ginger (didn't have fresh on hand) to add some additional flavor to pour over top of the whole thing. I also used green beans instead of cabbage only because I had them. Loved the spiciness from the red pepper!!!

Chili-Lime Chicken Kabobs

This is a great, super easy marinade. I marinated chicken cubes & served w/ grilled green peppers & yellow squash (just in olive oil & s/p) with a side of coconut lime rice from trader joe's. My husband said- " I don't know what you marinated this chicken in, but it is outstanding" - with no prompting! Definitely a keeper.

Grilled Broccoli

Wow! This was great! I am not a broccoli person (unless it is doused in cheese or some other sauce), but my husband likes it, so I bought some with the intention of making some stirfry Chinese style dish...but dinners got mixed up, as always & I needed an easy side tonight. This was perfect! The flavor was great, we both gobbled it up, I will definitely be making this again & passing on the recipe- I did not think it was that lemony at all (I used about 1/2 a lemon, didn't measure the juice) and I used a grill basket on a grill heated to about 400 degrees, tossing regularly. Thanks!

Fired Up Southwest Fajitas

Super easy & tasty recipe for fajitas! I made exactly accdg to recipe & didn't give 5 stars only b/c I thought the marinade mix kind of overpowered everything...next time, I'll either add more veggies/meat to this recipe or only use 1/2 the packet. Yum, thank you!

Black Bean and Rice Enchiladas

These were great- after my husband had eaten 4 of them over the course of a couple days, I mentioned that there was no meat in them and he said, "wait, there was no meat in those??". LOL! I did sub enchilada sauce for the picante & for the salsa over top b/c I couldn't find the picante in the store and also added a little bit of cheese to the filling, but other than that, kept it the same. It wasn't all that spicy b/c I didn't use picante though, so in the future I think I'd saute some jalapeno in w/ the onions/peppers. Yum, thanks!

Fried Rice with Cilantro

Very good & easy!!! Fish sauce & herbs add nice flavor to make a more Thai fried rice than Chinese style. I didn't have any chili peppers on hand so I added a bunch of crushed red pepper for a little heat. Also scrambled an egg into it like others, but completely forgot to use sesame oil, which I will definitely try next time!

Chipotle Crusted Pork Tenderloin

we really enjoyed this- the reviews made me nervous (and I was making it the first time for my in laws) so I cut down drastically on the chipotle powder, used maybe 1/2 tbsp (if that) on one tenderloin. next time I'd probably use a little bit more but I liked the flavor. Didn't grill it, but seared it in a pan on 3 sides & then baked it at 400 til the internal temp was about 142, then let rest for about 5 min.

Slow Cooker Taco Soup

Like others, I doctored this a little- as written, I'd give 3-4 stars, but with some extras, it is between 4 & 5! I took the advice of others & sauteed the onion w/ the meat (I used turkey) and the taco seasoning. Added the rest of the ingredients minus the water and used a bottle of beer instead. Also threw in some cayenne & chili powder for flavor/heat and would use a jalapeno in the future if I had one. Served w/ tortilla chips & shredded cheddar. Perfect for winter!

Apple Crumble Pie

great pie, just like my mom has always made for Thanksgiving, and so easy! I used brown sugar instead of white for the topping & added some lemon juice & maybe 2 tbsp flour to the apples- also tossed apples w/ sugar/cinnamon/flour in a ziploc before putting in pie shell. Yum, thanks!

Asian-Glazed 'Melt-in-Your-Mouth' Pork Tenderloin

We really enjoyed this! I did not have OJ so I added some apple juice to the glaze & halved the amount based on the feedback from others...I only used about 2 tbsp total b/c it is rather sweet/powerful, but complements the pork very well! I brined for about 3-4 hours and it definitely made a difference, so juicy & tender!!!! It was my first experience with brining anything other than a Thanksgiving turkey, now I want to brine everything! LOL I served it w/ some basmati rice & roasted carrots (tossed w/ olive oil, s/p & sugar before roasting). Yum! Will definitely make again.

Poppy Seed Poultry Casserole

I will admit I did not eat this after baking it, but I was making freezeable meals for a friend who had a death in the family & who has 2 small children- I normally make a version of this using wild rice, cream of mushroom & curry powder but thought that kids might not be too into that, so I tried this one. Made accdg to recipe and it was definitely bland (at least prior to baking), so I doctored it up a little w/ salt & pepper, some white wine (which I used in the other recipe), more dill & a little lemon juice. It definitely had more flavor then , but I guess I'll have to wait & see if they eat it or toss it!

Caribbean Holiday Shrimp

Not sure what I did wrong- I used cooked shrimp & let it sit in the marinade for about 4 hours before serving... it made the shrimp very mushy on the outside, I really did not like the texture. I did like the flavor though, I think I'd try it as a marinade for raw shrimp & then cook them!

Tangy Grilled Pork Tenderloin

We really enjoyed this!! It was sooo easy, using ingredients I always have in the house. My husband's comment was that it was "outstanding", which is something since he usually says "very good" if he likes something... I halved the recipe for use on about a pound-ish tenderloin, and boiled the remaining marinade to use as a sauce- in future, I would probably just make a separate dish of the marinade to use as a sauce b/c it was really good. Grilled to exactly 160 degrees & it came out perfect. Thanks!
