Chewy Whole Wheat Peanut Butter Brownies

Good - not terribly sweet. I added chocolate chips, and feel this was essential - brownies wouldn't have been sweet at all without them. Nice, dense texture. I substituted almond extract for the vanilla, and wouldn't recommend this. The almond overpowered the natural peanut butter I used.

Old-Fashioned Italian Zucchini Fritters

Good, but the zucchini put off a lot of water after I added the egg, flour, and salt. Had to keep adding flour to absorb the excess moisture. Made the fritters a little flimsy, but still tasted good. Nice way to use up extra zucchini!

Mom's Zucchini Bread

Very very good - I did, however make some changes that were recommended by reviewers. Increase zucchini to 3c. Reduce sugar to 2c. Replace 1/2c. oil with 1/2c. applesauce. I ended up with a LOT of batter. Made a loaf pan, small bundt cake, and 12 muffins with chocolate chips on top. I'm taking them to work! :)

Zucchini Brownies

Incredible! These are wonderful!!! The only substitute I made was to replace the two tsp vanilla with one each of almond and maple extracts, since I was out of vanilla. Moist and flavorful - perfect brownie consistency.

I decided to give this one a shot in spite of the quasi negative reviews... The bars did not hold together well and were very dry. They also were not sweet at all. Maybe another egg and another 1/4c sugar would fix it?

Not bad, but we didn't really care for the sherry... I'd cut it in half. Also, I used about half the liquid called for, and still ended up with too much. I made gravy with it, but doubt we'll be able to use all of it.

Fantastic recipe. I forgot to buy peanuts and used natural peanut butter instead, and it worked beautifully. I will say that it needs some more liquid - perhaps water or broth. I found the noodles a bit dry in spite of following the soaking/cooking directions exactly.

Eggnog Pancakes

This is a good recipe... I sifted the dry ingredients to help it not be too dense, since eggnog is so thick. The eggnog flavor is very subtle - almost understated, but nice. A full recipe will make about 12 1/4c. pancakes.
