Homemade Hamburger Helper! I used leftover potatoes from a roast, chopped into small cubes. I also used beef broth and some steak seasoning instead of the bouillon and water. Threw in carrots and some chopped collard greens for extra veggies and it was really good! My kids were skeptical but once they took a bite, they were happy.

Just what I was looking for - a quick replacement for store-bought mix. I scaled down to a single serving and put 2 tsp sugar and 1 tsp cocoa in a mug with 1 cup milk. Microwaved for 1 minute. Stirred in some marshmallows and a little squirt of chocolate syrup and microwaved for 30 more seconds. Perfect for my kids!

Crockpot variation: I put all the chopped veggies in the bottom of a crockpot, laid whole chicken breasts on top, whisked the flour and spices into some of the broth and poured that over top followed by the rest of the broth, milk and butter. I omitted the cheese and used soy milk and Earth Balance due to a milk allergy, but it was still really good. After about 5 hours on high, the chicken fell apart and I easily shredded it with a fork and knife right in the crockpot. I cooked the noodles and stirred them in right before serving.
