Favorite Banana Blueberry Quick Bread
Great recipe. I will apologize in advance b/c I may use some untraditional ingredients. Spices: I added 1 tsp. vanilla, 1 tsp. cinnamon, 1/2 tsp. nutmeg, Substitutions: used 1/4 c. applesauce & 1/4 cup butter, used 1 c. fresh blueberries mixed with some cake flour, 1/2 cup brown sugar & 1/2 cup maple sugar, 3/4 cup whole wheat flour & 3/4 cup pastry flour. I added orange rind from 1 orange (use microfine grater - works fantastic!). And I made Mini Muffins.

Whole Wheat Banana Nut Bread
The honey gives a rich flavor & color. I substituted 2 & 1/4 cups whole wheat pastry flour. I only had 2 bananas so I added a ripe plum (whirred with hand held blender). I also added some cinnamon & nutmeg and left out the walnuts. I had my doubts about how it was going to cook up because the batter was very liquidy but it came out wonderful. I baked it for 1 hour & 10 minutes and used cake tester.I will definitely make this again.

Purple Plum Pie
I omitted the pie crust (decreased some of the fat & calories) and made this into a crisp. I substituted 1/2 the amount of sugar in the filling and the topping with Splenda and I substituted 1/2 the amount of flour in the topping with oats. Very tasty.
