Zucchini and Potato Bake
Great side dish. We added cooked turkey bacon to give it a different flair! It turned out great!!

Easy Mexican Casserole
My Husband, In-Laws and I all loved this dish! I substituted the green onions for onions and left out the olives. I think I will add more chips next time if I make it like this. I was also thinking it would make a good dip, with out the chips. Just serve it with chips on the side.

Zucchini Delight
I made this for my husband and I. We didn't really enjoy it. There wasn't much flavor. I could have used the zucchini in a much better recipe.
