Nacho Chicken Casserole

Prepped the day before and stuck it in the fridge. When I walked in from work the next day, just put it in the oven. Very simple and tasted great. Omitted the mushrooms, only because I didn't have any on hand. Skipped the jalapenos, because I figured it might be a little to spicy for my seven year old son. Overall, a great recipe. Will make again.

Six Week Bran Muffins

Delicious...This was my first attempt with Bran Muffins. Bran sounds so "healthy". Well these may not be healthy, but they were great. I scaled the recipe down to 36 muffins. I made six this morning for Sunday breakfast. I plan to make the remainder throughout the next week or so. Probably won't keep the batter around for more than a two weeks. Anything longer than that, doesn't sound too appetizing. Anyway, one other modifications that were made: used Raisin Bran cereal, added about a teaspoon and a half of cinnamon, used half butter/half shortening combination and added a cinnamon, brown sugar and pecan pieces topping. I know I'll make these again. Great recipe.

Better Than Sex Cake II

Oh....this is so good. I made a few changes, based on other reviews. I used a yellow cake mix, just to be different. I used about 3/4 of a can of the condensed sweet milk and I used a more of the caramel topping than what's called for in the recipe. I decided to be lazy, so I did use the refridgerated whipped cream. It turned out great. Served to company and they all enjoyed it. No doubt, I will make this again. I may try it with the devil's food cake. That sounds divine.

Mom's Mustard Style Potato Salad

Great traditional southern dish. I made this for Memorial Day. Everyone loved it. I did leave out the pimentos and celery (personal preference). And I don't like onions in my potato salad, so I boiled large pieces of sweet vidalia onions in the pot with the potatoes. Easily removed the onions before cubing up the potatoes. And I used about twice as much mustard, again, that's a personal preference. And used sandwich spread instead of mayo and sweet relish. With my changes, this will now be my go-to potato salad.

Classic Macaroni and Cheese

Great with modifications: used half mild cheddar and half colby, cut into cubes, replaced evap milk with 8 oz. of sour cream, added two eggs, and sprinkled about two handfuls of shredded colby/monterey jack on top, during the last 10 minutes. Last, but not least, lowered the temp to 350.

Chocolate Cake II

OMG this cake is fabulous. I love chocolate. I mean love, love, love chocolate. I followed the recipe, in addition I added a box of instant chocolate pudding and a full cup of semi sweet chocolate chips. The cake was very sweet, moist and absolutely delicious. I will for sure make this again and again and again. If you love chocolate, you will find this cake irrisitable.

Stuffed Shells IV

This is a very good "company" dish. It's simple to make, but looks like you put forth the extra effort. I followed the recipe exactly and it was delicious. My seven year old son loved it too! That's always a plus.

Red Velvet Cake I

Delicious. I followed the recipe exactly and it turned out great. I was a little concerned with some of the other reviews in reference to the cake being dry and/or bland. No problem with either of those issues. My husband, who is not very enthusiastic about many cakes, raved about this one. He had a slice right after Sunday dinner and went back for seconds, immediately. Will definately add this to my repitoire....

Mini Ham And Cheese Rolls

I've made these several times and they are always a hit. They are prepared quick and taste great. I followed the suggestion of one member to halve all the rolls at once instead of one at a time. These are so good. I've used them as appetizers and for a quick lunch for my seven year old son. Great, great, great.

Meatball Sandwich

These sandwiches are great. The recipe was simple and the taste is awesome. I think next time I may place meatballs on halved pre-made dinner rolls and serve as appetizers. Great, great, great.

Spinach Brownies

Loved this. I changed the recipe a little because of personal preferences. I used shredded mozz cheese and cheddar cheese. Also substituted the 1/2 cup of butter with a 1/4 cup of light tasting virgin olive oil. I made this for a "potluck" and this appetizer received rave rewiews. I will make again and again and again. It was simple and delicious.

Blueberry Sour Cream Coffee Cake

This is sooo good. It's very sweet and quite delicious. The brown sugar and pecan layer is a perfect compliment to the moistness of the overall cake. I will most certainly be making this again.

Easy Cheese Ball II

I've made this on many occasions. It's great and easy, easy, easy. It does taste much better, after it's "marinated" overnight. I've also rolled the ball in ground black and red pepper, for a little kick. Just another variation. Try it!

Honey Bun Cake I

This cake is sooo delicous! Oh my goodness----absolutely fantastic. I followed the recipe exactly and it was to die for. Very sweet and extremely yummy. I wanted to try this recipe out, before my job Christmas party, because I'd planned on making it for our potluck. Well...its a winner. I'm sure everyone will love it as much as me!

Butterhorn Rolls

This was my first attempt at making rolls. It was a disaster. Based on the other reviews, I'm sure it's something that I did or didn't do correctly. The dough didn't rise. Maybe I was supposed to mix the yeast and water with a blender/mixer. I just used a spoon. Or maybe the yeast I used was "old". I've read that this can adversely effect your results. Maybe, I'll try this again or look for an even simpler recipe.

Mini Cheesecakes

I'm a cheesecake lover and thought these would be great. Unfortunately for me, they were not very good. I followed the recipe exactly, but topped them with strawberry topping. They looked lovely, but they were not nearly sweet enough and they were not creamy, like traditional cheesecakes. Still looking for a mini cheesecake recipe.....

Mexican Lasagna

Loved this dish. My six year old son requests this at least once a week. My husband, who is not really a "Mexican" food fan, enjoys it as well. I've tried several "tortilla" Mexican lasagna from this site. This was a great variation, with the lasagna noodles.
