The Best Banana Bread

This is a nice bread. The crust came out a little too crispy for me, but I might of baked it too long. Still has a nice banana flavor and it very moist.

Only thing I changed was cutting the recipe in half and baking in a 9x5 for 45 minutes. Heavenly! We ate almost the whole loaf in one night!

Dad's Pumpkin Chiffon Pie

This is a great pie. I made the crust with ground gingersnaps and butter, but other than that I followed the recipe. Light and fluffy with a nice spicy pumpkin taste. I think I like this better than tradiional pumpkin pie! Seems to me that it tastes better a day or two out as well, as the flavors have melded together. Only thing is the crust did get soggy after a couple days. This one is a keeper for sure!

French Apple Pie with Cream Cheese Topping

This is awesome! I baked in a 9" springform pan, left out the walnuts (didn't have any) and left the peel on the apples, which made it a lot faster to make. I also used salted butter in the frosting, and couldn't taste the difference. Everything about this pie is great!

These are awesome! I made mine on my George Foreman grill 2 at a time. Brushed one side with butter, laid that side down on the grill, then buttered the other side and cooked at 425 for 4 minutes, with the grill closed, which gave nice grill marks on both sides. I turned them over at 2 minutes to help even the browning. Came out light, fluffy, and buttery. Will be making these again!

Ninety Minute Cinnamon Rolls

Perfect! I made 8 larger ones instead of 12 and baked them in a 9x9 dish for 30 minutes. I also topped them with a milk, powdered sugar, and vanilla glaze. Easy and quick to make and oh so yummy!

Cuban Ropa Vieja

Excellent!! I used chuck roast instead of flank. Cooked on low for about 10 hours (overnight). Served over rice. Will be making this again for sure, next time I might spice it up a bit as well.

Blueberry Buckle

This was super! Only thing I changed was using butter for the shortening and decreasing the flour to 1.5 cups. I used frozen blueberries that I thawed, dried, and coated in flour. Mine took about 40 minutes to bake. I let the butter for the topping get a little too soft, so the topping melted more into the cake, so make sure your butter is pretty cold.

This was amazing! I cut it in half, used the whole can of tomatoes and left out the celery. Served over yellow rice. Hubby couldn't get enough! Try it with a few splashes of hot sauce, yum!

Zucchini Chocolate Orange Cake

This cake is incredible! I made exactly as stated, but in a 9" spring form. Took about 50 minutes to bake. The middle sunk a bit, but that's my own fault for not having a Bundt pan! Make sure to squeeze as much water out of the zucchini as possible after shredding, otherwise this will be way too moist. I did, and it's still insanely moist. Will definitely be making this again!

Blueberry Orange Bread

This is really yummy! I increased the berries to 1 cup and baked in a 9x5. Mine was done in only 50 minutes (good thing I checked!). The berries sunk to the bottom, even after coating with flour. But it still tastes great!

Sean's Falafel and Cucumber Sauce

I haven't had falafel before, but always wanted to try it. These were great! I doubled the recipe and it took a long time to prepare, but they were worth it! I forgot the coriander and added a pinch of curry. I also squeezed out as much liquid as I could from the onion/parsley mixture. It think that is the key to the patties not falling apart. I used a piece of wax paper to form a log then sliced (like you would for slice and bake cookies). I then laid out the patties, folded the wax paper over, and pressed them lightly with the bottom of a glass. I dipped them in oil and baked them @ 350 for 10 minutes each side, then broiled for a couple mins each side. Turned out crispy on the outside and soft on the inside. The sauce is awesome as well. To that I added juice of half a lemon and a few liberal shakes of garlic powder and used sour cream instead of mayo. I squeezed as much liquid out of the cucumbers as I could and the sauce wasn't thin at all. I let it sit for an hour or so. Served in pitas with lettuce and tomatoes. Will be making these again for sure!
