Pumpkin Spice Bread
Moist and delicious. Makes to big loaves! I like to add 1/2 c. golden raisins.

Apple Oatmeal Crisp
I used all Macintosh, because I had a bag of them. They are a softer and sweeter apple. I tossed apples in plastic bag with (less) sugar and cinnamon. Even if it happens not to brown to what you think it should, DO NOT overcook or you will have apple mush, tho still tasty.

Quick Black Beans and Rice
Very good for a simple side to a cuban pork roast I was making. I cooked my brown rice separately in a rice cooker.
