Bob's Mexican Stuffed Chicken
Very tasty. We never eat Corn Flakes and I didn't want to buy them just for this recipe, so I substituted "Spicy Nacho Doritos" and it was great. Probably less work, too. Also I used frozen, precut, pepper strips. It turned out very well. I asked my husband if should keep the recipe and he said "definitely".

My Mom's Parmesan Chicken
I used skinless, boneless chicken breast. Followed the recipe exactly. However, I only baked the chicken for 20 minutes total. After 10 minutes I added the wine. Worked out very well. I made enough to have "leftovers". Took those pieces out earlier so they won't be too dry. Great recipe.

Jalapeno Chicken
After the first bite my husband and our neighbor both said "this is a keeper". Great recipe. I used skinless, boneless chicken breast and seared it first as somebody suggested. Then I doubled the sauce and poured it over the chicken and put it into the oven. Yummy. I would probably reduce the cumin next time. I served it with Basmati rice.
