Luscious Lemon Snaps

Reviewed: Dec. 5, 2009
Not your traditional cookie. Don't be alarmed by the oily dough or the flat thin cookies. These really are snaps. I used zest and fresh juice and the initial taste is good. But they do have an oily aftertaste. I probably won't make them again. If I do, I might try adding a cup of powdered sugar.

Chocolate Yummies

Gooooood Stuff! Don't be afraid to use more marshmellows than the recipes calls for; the chocolate layer is thick. Lot's of compliments from the family and they were gone in 24 hours.

It's MY favorite too! It's soo good, I have to double the recipe to feed 6. Moist and flavorful. The only thing I add is a little onion powder and garlic powder. Give it a try!

Apple Cake I

Reviewed: Oct. 11, 2009
Tasty cake! I followed other reviewers and replaced half the oil with applesauce and cut the sugar to 1 cup. I chopped the unpeeled apples in my food processor. It's best if kept in the fridge. Great item to send in the kids lunch box.

Slow Cooker Fruit, Nuts, and Spice Oatmeal

Reviewed: Oct. 11, 2009
This was pretty darn good! I used raisins and no nuts (picky eaters). I used rolled oats (that's what I had on hand) I chopped up 2 granny smith apples in my food processor put the rest of ingrediants in and used the "keep warm" setting on my slow cooker. (mine runs pretty hot). It came out perfect! A good stir and your ready to serve! A little milk or fat free half and half...delicious! I had a second helping later! Great breakfast idea for school mornings. Send them to the bus stop with something warm and filling in their belly! Not to mention, low fat, high fiber for Mom! Great recipe! Thanks for sharing!

Mediterranean Barley Salad

Reviewed: Jul. 9, 2009
This is a good salad. I loved the texture of the barley. I used kalamati olives and some garlic powder. It was a great side dish for steak night and I ate the leftovers for lunch.

WOW! This is Excellant! I used Klamanti (sp?)olives and a few capers. This could be a meal for me. It got rave reviews at a dinner party tonight. Fresh olive oil, mozzarella and basil are key. Delicious!

You have to try this! I made it last year and can't wait for corned beef to go on sale after St Patty's day so I can stock my freezer! Excellent for sandwiches. My husband would eat it right out of the frig! great in casseroles or with noodles. Delicious and can be use so many ways!

Campbell's Kitchen Creamy Chicken Enchiladas

Reviewed: Oct. 21, 2008
I torn this recipe out of a magazine. A little different. Same ingrediants, different amounts. Good Stuff! Not unique or gourmet but tasty and picky kid friendly. I found the sauce was really thick and after 45 mins in the oven the enchiladas weren't hot in the center. We finally stuck them in the microwave for a couple of minutes. Next time I will thin the sauce a little. All in all a good dinner.

Onion Pasta

Reviewed: Sep. 9, 2008
Although it sounds delicious, I was hesitant to try this. So I scaled it in half to use as a side dish and it was WONDERFUL! My husband complimented several times. I will certainly make this again! For a main dish I'll probably add maybe mushrooms and chopped tomato, maybe some shrimp. Don't be intimidated by all the onions. Once carmelized, they have a sweet, mild, delicious flavor. Thanks for sharing your creation!

Slow Cooker Western Omelet

Reviewed: Aug. 25, 2008
Big Disappointment. I was excited to fix this because it is so unique. Either my crock pot is too hot, even on low or I missed something in the preparations becuase this didn't turn out. First it was overcooked to the point of being brown on the top and sides. Then it was pretty tasteless and the texture was very odd. I hate to give a bad rating but I didn't care for this at all.

Easy Granola Bars

Reviewed: Aug. 15, 2008
I love this recipe. I've used all kind of different combinations of nuts and fruit and it comes out wonderful. I usually don't add the chocolate chips, they are not needed. You can make these crispy if you lower the oven and bake longer. Make sure you cut them while they are warm! Easy and tasty!

Yummy Pink Punch

Delicous, easy punch. I couldn't find cranberry gingerale so I used a lg bottle of lite cranberry juice and 2 liters of regular gingerale with the rasberry sherbert. It was sweet but refreshing at a friends baby shower.
