Kielbasa with Peppers and Potatoes

This was excellent. I cooked the onions, red and green peppers and mushrooms seperately to get them caramalized. Then I added them to the top of the kielbasa and potato on each plate. I used turkey kielbasa, didn't add any oil and only used a little (1T) oil in the onion/pepper mix. Easy to make this dish low-fat. Add more veggies, use less oil. With the caramalized onions and peppers, we felt like we were eating a sausage, onion and pepper sub! Will make again. Only took 20 minutes including prep.

Slow Cooker Beef Stew I

This was melt in your mouth delicious! Perfect for a cold day...with some french bread to soak up all the gravy. Stew meat came out so tender. The only difference I made was adding 1 packet of dry soup mix and 1 & 1/2 cups of water in place of the beef broth and added frozen peas. Didn't brown the meat first, didn't need to! Will make again for sure!

Easy Mini Quiches

Very yummy recipe! The only change I made was using part-skim mozzarella cheese instead of american and cilantro instead of parsley. To keep them on the smaller side, only fill the mini cups 3/4 of the way and make sure to grease the pan well! Will make again for sure!

Hummus III

This hummus was devoured! I did make minor changes - added a few more garlic cloves(we're garlic fans), and did end up adding a few tablespoons of the chickpea juice to get proper consistency. I also added red pepper flakes in the mix and processed it all in my food processor. Topped it with sesame seeds and paprika for color, it was soooooo good!

Cheesy Corn

I was looking for something to spice up some plain frozen corn I had. I admit, I didn't make this receipe exactly, only because I didn't have all the ingredients on hand. But, by just adding frozen corn, vegetable cream cheese and some parsley, THIS WAS DELICIOUS! It came out so creamy. Next time I will use reduced fat cream cheese just to cut some calories out. It really didn't take much cream cheese (I used a 1/2 bag of frozen corn and only 2 ounces of cream cheese and it was very creamy. After defrosting the corn, I added the cream cheese and parsley and cooked it another minute or two, pausing it every 30-45 seconds to give it a stir. Cooked it all in the microwave in the serving dish. Easy cleanup! Thanks for the receipe!

Banana Peanut Butter Bread

This bread will now be my number one banana bread! Came out perfect - dense, moist, flavorful. Two small changes - I didn't have enough walnuts to add to the batter, so I sprinkled walnut pieces on top before putting into the oven. Also, I sprinkled a little ground cinnamon on top half way thru cooking. No changes to the recipe needs to be made! Thanks for the great recipe. Making another tonight to take to my coworkers tomorrow!

Peanut Butter 'N' Jelly Breakfast Shake

This was heaven!! For someone who loves PB&J sandwiches, and ice cream this was THE BOMB! Totally satisfied my PG&J/ice cream cravings. Will make again! Only change I made was adding a bit of ice to make it smoothie like. I could have frozen the banannas if I wanted to wait.

Crab Stuffed Flounder

This was delicious! My hubby and I caught 2 stripers last night and I wanted to make it all fancy for him (at least for the first filet). I made the recipe exactly as written, only exception is the mustard. I used spicy brown mustard as it was all I had on hand. Still turned out great. Hubby cleaned his plate and asked that we eat the leftovers tomorrow night. (fine with me, easy dinner tomorrow!)

Corned Beef Hash

Excellent recipe! I cubed red potoatoes (about 2 medium potatoes), 1 small onion, leftover corn beef cubed, added spices: savory, garlic salt and bit of cayenne pepper for some warmth. Used 1/2 can of low sodium beef broth all over low-med heat on the stovetop. Eggs and toast on the side, this was a great "breakfast for dinner"!

Warm Crab Parmesan Dip

I love this recipe and it's always been a hit at parties. I actually increased the crab to 2 cans instead of just 1. Just comes out a bit meatier. I serve with flavored wheat thins. And its great that it only dirties a spoon and the dish you're cooking it in! Thanks for a great recipe!

Calamari

This came out incredible! First, I found cleaned, frozen squid at my local supermarket. It was only $3.99 for 12 ounces. (This served 2 people). I combined flour, cayenne pepper, parsely flakes, salt and garlic. Wet the squid after slicing them. The flour mixture coats them very well. I agree with others in testing the first one to make sure it is cooked, but not overcooked. I don't think I cooked them any longer than 60-75 seconds, in small batches. My husband was bummed I didn't have any more to cook up, they were delicious! Keeping this recipe! For Rhode Island style, cut up some pepperoncini's and mix them into the finished product. YUM!! This is a keeper!!!!

Brown Sugar Chops

This was very good considering it wasn't with fancy ingredients! I cooked these on the grill and they came out delicious. Coated them with soy sauce again after flipping them. Very moist! Will make again!

Favorite Peanut Butter Cookies

Excellent basic peanut butter cookies. I added a dab of grape jelly/rasberry preserves 1/2 way thru cooking. I just indented the cookie in the middle with a spoon. Yum!!

Oatmeal Peanut Butter Cookies

Very tasty. I'd use a bit more oats so they don't cook so thin. I added vanilla chips and used chunky peanut butter. I like to add the end of a loaf of bread in the storage container to keep them soft and chewy. Will make again!
