I have made this twice and my family LOVES it! The first time I made as written and it was a five star bread. The second time, I made it a bit healthier by following Sara Jane's recommendation of replacing the oil with applesauce, and I also cut the sugar to three cups (two white and one brown) because that was all I had in the house. My family liked it even better that way! We've eaten the full batch (yes, three loaves worth) in just a week! My kids love it spread with peanut butter. This makes great muffins, which cuts down the baking time and makes for a more portable snack. This is the only recipe for pumpkin bread I will ever use. Thanks Cheryl!

This was a great recipe! My family loved it and it was so easy. I used chicken thighs and removed the skin (just my preference). I used a little less butter, but otherwise followed the ingredients as listed. I covered the pan for about half the chicken from drying out, and then basted just once. Turned out perfectly and was a huge hit with my family!
