This really perked up my plain black beans. I added the onion, garlic, along with the cayene pepper, and I added a smidge of corriander. I let it simmer for about 20 minutes, then I added the cilantro. My dh and ds both were happy with it, especially my dh. It was a great way to brighten up a somewhat bland, but healthy dish!! Thanks for sharing it.

I didn't have the fideo noodles, but I did have a 1/2 pkg of angel hair pasta that I just broke up into 1/4th's. I really liked the flavor and texture of this dish. It's very similar to something I had at a restuarant many years ago. Great change from rice. I don't eat pasta very often, but I will remember this one.
