Craving Cookies

This is a distinctive cookie and the result is quite enjoyable. The texture is more like that of a blondie, just in a cookie shape. I followed the recipe and instructions exactly and enjoyed the final product. This recipe is deceiving in that it seems simply (due to the few ingredients), but is actually hard to do correctly, because the dough is very dry. If the chef over mixes, the glutens will become tough and ruin the cookie.

Paella I

I found this took almost twice as long to cook as suggested in the recipe. I used clams rather than mussels, so that probably added 5-10 minutes, but even the shrimp didn't cook so quickly, just being covered -- I had to mix them in. Also, I used short-grain, white rice, rather than arborio. To get it starchy, I soaked it before using it -- this draws out the starch. It worked well.

Cheese and Bacon Potato Rounds

Fantastic, simple recipe -- it achieves great results all on its own. I did as someone else recommended and dipped the potatoes in butter rather than brush them. Also I thoroughly spiced with salt and pepper. After flipping once sprinkled with paprika. Yum! Everyone at the party loved it.

Cheese Garlic Biscuits I

Maple Glazed Sweet Potatoes

Easy and delicious, I served at a party and it went over quite well. I used yams rather than sweet potatoes, walnuts instead of pecans, and skipped the coconuts. Also, I added parsley. I think this recipe is a bit heavy on sugar, I think it could be cut back a bit, perhaps using some oil instead?

Chinese Pork Buns (Cha Siu Bao)

The dough recipe was perfect, albeit very large. The stuffing however was pretty bad. I have made quite a few chinese dishes and this had the worst flavor. It needs to be sweeter and more vibrant. Next time I will use less oyster sauce and add honey and ginger.

Lobster Bisque I

This recipe was easy and delicious, although I don't think it was thick enough. I left out the green onions and used a bit more lobster. Also, I added some chicken stock for flavor. Next time I will reduce the stock longer (I let it go for 1h15m and it still was a bit to thin).

Chocolate Chip Cookie Dough Cheesecake

Outstanding!! I had to increase a bit for a 10" pan, but it came out spectacular. I was particularly impressed with the simple, eggless cookie dough part! My only change was to use chocolate-mint wafer cookies.. I think the subtle mint addition really adds to the over all taste.

Cherry Pie III

This recipe just barely created enough dough. I ended up creating a lattice on the top, because I didn't think there would be enough. I used a standard 9" pyrex pie dish. Also, I did half cherries half raspberries, because cherry pie is boring (I think). I switched almond extract to vanilla extra (better with cherries, don't you think?) Anyway, overall -- a basic pie, quite tasty.

White Chocolate Raspberry Cheesecake

I scaled the recipe slightly to prepare it in a 10" form. I favored the white chocolate, because it seemed like it wasn't enough. Well, even still, my guests said they couldn't taste any white chocolate -- but I got the subtle flavor. I think had there been any more it wouldn't have set. Overall, good recipe!

Eclairs II

This is a very good recipe, but I made a few modifications: first, I used 1/8 cup conf. sugar and 1/8cup regular sugar in the filling; second, I piped the filling into the eclairs; third, instead of melting butter and choc, I melted choc in milk, and didn't need any water. And, because I piped the filling, I was able to dip the eclairs upside down in the chocolate. YUM.

Oatmeal Raisin Cookies I

I substituted cranberries for raisins. The general problem with this recipe was that the cookies were too crunchy. Next time, I will use half butter / half crisco to make it softer, and perhaps a different baking soda / baking powder combo.

Artichoke and Roasted Red Pepper Dip

This is a tasty dip that is absolutely hideous looking. I added onions, granulated garlic, pepper sauce ("red hot"), salt, and pepper during the saute to add more flavor (it needs it). Everyone agreed it tasted wonderful, but looked gross. This would serve as a great stuffing for peppers or tomatoes.

Cream of Fresh Tomato Soup

This was a simple, fast, delicious soup. I only changed one step. Instead of straining the soup, I blended it for a smooth puree (using a hand blender) -- tasted incredible! I garnished with roasted corn and parsley.

Easy Berry Parfait

I presented this delectable dessert in a large wine glass. On top I stood one blackberry, one raspberry, one strawberry (which I sliced and spread -- french style), and two mint leaves... The guests loved it!

Mediterranean Chicken

Good kalamata olives are the key to this dish. I paired it with Wild Rice. However, afterwards I realized a great appetizer would have been to use some of the diced tomatos and some of the kalamata olives (with the oil) on a great bread with a bit of oregano and black pepper, to make Bruschetta. I tried it afterwards -- perfect! Also, I had a guest who was vegetarian, so I made an addt'l serving with Talapia (fish) instead of chicken, I actually liked it better!
