Curried Honey Mustard Chicken

Very good. I used boneless/skinless chicken breasts, spicy brown mustard, a little less honey, and more curry powder (hot madras). I definitely think the extra curry powder was a good move.

Delicious! I only used 1 T olive oil to cut back the fat a little. I used 10 oz spinach, 2 cans of drained diced tomatoes, and portabella mushrooms. I also used reduced fat feta, and instead of mixing it in, sprinkled it on top to taste in the individual bowls (also to save fat/Calories).. Used Barilla Plus Penne Pasta Oh so wonderful!

Creamy Dill Dipping Sauce

Used fat free sour cream and less mayo-- mainly because my diet just screamed, "No" at the thought. :) Still very good with my veggies.

Grandma's Gingersnaps

Good, I was going to give these 4 stars because the appearance/texture was a little off-- but considering they were all devoured by my boyfriend and friend before I could have a second cookie to verify my opinion-- guess it has to be a 5 star cookie. They loved 'em.

African Peanut Soup

Delicious. Using a NATURAL peanut butter is a must for this recipe... natural has a more peanutty flavor suited better to this recipe. I used vegetable broth. I did make a few changes. I added a chopped jalepeno with the peppers; used tricolored peppers... mine turned out a little paler than the photo-- not the prettiest color, so I added a little bit of tomato sauce to darken it-- which I found improved the flavor. Even brought some to a friend from Ghana-- she thought this was tasty and very authentic (although she is used to creamy peanut butter herself.) Edit: Wanted to add that this is probably something you'll either love or hate. Very distinct flavor.

Great recipe. I made just a few modifications. About 2/3 of the soy called for-- still a strong soy flavor... some might want to half it, but 2/3 was just about right for me! Added just a little Thyme. Used tri-colored peppers instead of just green (my SO hates green pepper) -- didn't need as much onion as listed. Also, and regardless of what else you do-- you'll want more marinade! I ended up tripling mine, but doubling would have been enough. Again, great recipe!!!!

Tomato Pork Loin Chops

Very good, and easy. And, thankfully, a good pork chop recipe not so heavy in sugar that my diet can't handle it! It's always nice to find healthy and tasty in one dish. I spiced the pork chops before browning, as per some other suggestions I saw a couple of people called this tough--- I really have no clue how that could be with all the liquids in the recipe, unless they spent too long browning or had freezer-burned chops. Mine were VERY moist.

Pomegranate Jelly

Nothing but raving when I packed some of this up for gifts. After reading the reviews, I doubled the pectin (used liquid pectin) and added more lemon juice (it won't gel without enough acid)-- but that was quite enough for the perfect texture... and a very delicious taste. Wanted to add--- I went to see the SO's family who I sent this with... Got complimented on it as soon as I saw them, 6 months later. Wow.

Sweet Potato Casserole II

Was looking for a recipe like my mom used to make. I never remembered her using orange juice, but I went with it, and it was fantastic! My boyfriend made much adieu about not liking sweet potatoes, but agreeing to try them because I made them, and he ended up eating three servings!
