Bold Vegan Chili
This recipe is simple and delicious! I substituted 3 heaping tablespoons of dark brown sugar for the molasses and was extremely happy with the results. Adding a little chopped pineapple to the serving bowl was also a nice change.

Chickpea and Quinoa Salad with Lemon and Tahini
We made the recipe as-is, and it was very good. The flavor is tangy, and I think that eating too much at once would be overwhelming. But as a small side, this is a good choice.

Tomato Zucchini Casserole
We used heirloom tomatoes, but otherwise followed the recipe. This was delicious - very much a comfort food with a sweet tanginess created by the tomato.
