Donna's Lasagna

Reviewed: Mar. 1, 2009
Delicious -- this will be my go-to lasagna recipe! Because I only had one 6 oz. can of tomato paste, I used 6 oz. tomato sauce as a substitute for the second, which worked out great. The meat mix was a little too thick for my liking so I added a bit more of the pureed tomato and tomato sauce with another 1/2 tsp. or so of sugar to balance out the extra tomato flavor.

Easy Vegetarian Corn Chowder

Absolutely delicious. I add potatoes (pre-cooked) and use chicken broth rather than vegetable, since that's what I tend to have on hand.

Chocolate-Zucchini Cupcakes

Quite good but I think they would be better if they were more chocolatey (a la Devil's Food Cake).

Whoopie Pies VIII

Reviewed: Jul. 30, 2008
Absolutely incredible -- for the Canadians out there, they taste very similar to Jos. Louis packaged snack cakes. This is the whoopie pie I've been searching for -- moist cakes with the perfect creamy center. If you don't have sour milk on hand, just add 1 tsp. vinegar to 1 c. milk.

Garlic Butter

Reviewed: Jul. 17, 2008
A good starting point from which to customize -- I expect I'll have better results by using garlic powder instead of salt next time around!

Cheesy Beef 'n' Rice

Reviewed: Jun. 24, 2008
Excellent, and even my extremely picky husband loved it. I didn't have carrots so used green peppers, which made for a great taste combination -- they were a bit soggy after simmering and baking, though, so next time I'll hold off on adding them until the last couple minutes of simmering prior to adding the beef. I find that the bouillon is salty enough that the salt can be omitted from the recipe. Because we like cheese, I added a bit more than the recipe calls for.

Super Duper Oatmeal

Reviewed: Jun. 24, 2008
A good starting point for inspiration but I feel the recipe needs some modifications. For me, the finished product was too runny -- next time I would probably decrease the milk and water by 1/4 cup each. As other reviewers suggested, I added some vanilla (1/2 tsp) and an additional teaspoon of sugar to sweeten it to my tastes. Using a bit of fat-free half and half in place of some of the milk adds richness without extra fat.

Broccoli Pizza Pie

Reviewed: Jun. 24, 2008
Not too bad with more cheese and garlic than the recipe calls for. I used store-bought pre-baked pizza crusts, added the filling and baked for several minutes.

Carrot Cake III

The perfect carrot cake! I substituted one cup of whole wheat flour for one cup of the white with no problems.

Orange Cream Fudge

Amazing -- creamy and rich. As other reviewers have said, it tastes just like Creamsicle ice cream bars. A unique alternative to typical chocolate/peanut butter fudges -- it looks great and was a huge hit with friends and family.

Penuche Sugar Fudge

Reviewed: Apr. 13, 2008
I used fat free half-and-half and it turned out quite well -- not quite as creamy as I would have liked but this was possibly due to boiling or beating it too long.

Spicy Three Pepper Hummus

Reviewed: Apr. 11, 2008
My search for the Ultimate Hummus Recipe has ended. I will cut down on the spice next time around due solely to the wimpiness of my palate, but give the recipe a wholehearted thumbs-up. Amazing eaten with multigrain Tostitos.

Janet's Rich Banana Bread

Quite good but much too salty -- I cut the salt in half the second time around. I also used 1/2 cup whole wheat flour and 1 cup white instead of all white. Very moist!

Chocolate Icing

Reviewed: Nov. 29, 2007
Since the frosting looks glossy in the photos, I was expecting a creamy consistency. I was surprised when the icing hardened, but not disappointed, as it was absolutely yummy. Love the extra "flavour dimension" added by the brown sugar. I used a few drops of almond extract because I didn't have quite enough vanilla -- the flavour complemented my brownies perfectly.
