Crispy Barbequed Tofu Slices

This was AWESOME! I've been looking for recipes to make tofu edible and this it it. I actually left out the egg (didn't have any) and just dipped the tofu in BBQ sauce diluted a little bit with water and it still turned out fine. This does not reheat well though (even if you try to bake it). From now on I will only make as much as I can eat in one meal. Thanks!

Corrigan's Minestrone

This was great. I cut back on some of the veggies and used 3 potatoes, 4 carrots, and 3 stalks of celery. I doubled the broth and halved the pasta as suggested by other reviews. I also added a can of petite diced tomatoes and 1 zucchini and 1 small yellow squash. And unlike some of the other recipes on here when this recipe says 12 servings it MEANS 12 servings. Lots of leftovers.

Red Pepper Soup

This turned out well. I left out the heavy cream and added a yukon gold potato to preserve the beautiful red color of the peppers. I roasted the peppers on the stove over an open flame. And the dash of cayenne is a must!

These were pretty good. I listened to the other reviews and reduced the "sugar", but I will stick to the recipe next time. UPDATE: Have made these several times now. My mom suggested adding raisins and they turned out even better!

Goat Cheese and Spinach Turkey Burgers

Delicious!!! I sauteed fresh spinach and used peppered goat cheese. These were amazing. Even my boyfriend liked them and he is a beef kind of guy. I had been trying to make my turkey burgers the same way I make my beef burgers (egg, bread crumbs, onion, green pepper, spices) but the turkey burgers were not that great. Now I can make turkey burgers at home. Thanks for the great recipe!

Asparagus with Parmesan Crust

Delicious and simple! I followed the advice of past reviews and baked the asparagus for 15 minutes before adding the cheese and baking for another 10-15 minutes. I baked mine at 375 degrees (because I also had salmon in the oven) and it still turned out well.

Great recipe! I only used 2 chicken breasts, added onions, and used the jar alfredo sauce. I think I'll add mushrooms next time too. Take it easy on the Romano because it's salty.

These were good. I omitted the chervil because I didn't have any one hand. These came out just as good as the ones you buy at the store and if you increase the basil and reduce the salt you don't even miss the salt. Healthy and tasty!
