Baked Dijon Salmon
I made this for dinner guests on short notice, and everyone liked it. I left out the parsley (didn't have it) and the pecans (allergies). Would definitely make again - though I'd half the recipe (have lots left over) and would probably leave out the bread crumbs, just for my own personal taste.

Mother's Applesauce Muffins
I found these while looking for a way to use up the rest of the applesauce in the fridge. I halved the sugar and doubled the spices - result was a subtly sweet, filling muffin that we both enjoyed. Will definitely make again.

Stuffed Eggplant Parmesan
We enjoyed this...I added green peppers and italian seasoning and poured the sauce around the eggplants instead of over to avoid any mushiness. Mixed the parmesan in with the breadcrumbs and added the mozzarella with about 10 minutes left. I'll definitely be making again.
