Taco Casserole

Made this on a cold night when I had no idea what to have for dinner. I used a can of Rotel instead of diced tomatoes because that is what I had on hand. I also added a few spoonfuls of picante sauce and some black olives. I used a taco seasoning from this site and cooked it with the meat like I would for tacos. Mixed some cheese in the mixture. Did not put chips on top but did serve with chips. The whole family liked it. Will make it again.

Pumpkin Cheesecake Squares

This was really good. The whole family liked it. I could only find a 16.5 oz cookie dough so I used the whole thing. I was kinda worried about using the whole bag of cinnamon chips but did it anyway with no regrets. I used a heaping teaspoon of pumpkin pie spice and I think it could have used a little more. HINT - I can only find cinnamon chips around the holidays with the baking goods/chips so be sure to stock up when you see them.

Zucchini Brownies

This has been in my recipe box for a year waiting for me to work up the courage to try it. They were excellent. My whole family loved them. Take the advice of others and DO NOT add an egg. Once you put the zucchini in you will have enough moisture. I let my batter set a few minutes after adding the zucchini then mixed it again. I only wish I had made them sooner in the zucchini season. Will definitely make these often next summer when zucchini is abundant. Oh, I conveniently forgot to tell the kids there was zucchini in these and they never figured it out.

Almost Caramel de Lite Bars

I don't know that these tasted anything like the Caramel de Lite Bars (at least we did not think they did), but they are good and extremely easy to make. Be warned that they are very sweet and a small piece goes along way. I only put coconut on one half so that the coconut haters in my family could have desert too. If you cut these to soon you will need to eat it with a spoon. They firm up nicely once they have cooled completely.

Pistachio Cake II

This was very good, very moist, and very easy. I made it to take to my son's girlfriends house and everyone liked it. I did use cool whip with the pudding mixed in for the topping instead of dream whip. Will definitely make again.

Mexican Shepherd's Pie

This was really good. The whole family ate it and liked it. I did not use a whole onion and added some chopped garlic to the meat. I added a few tablespoons of salsa when I added the tomatoes. I also added a can of pinto beans, that I rinsed first, to the meat mixture. I put the olives on top of the layer of corn. Like others I used two boxes of cornbread mix, but I added the cheese to the mix instead of putting it on top. Oh, and for the taco seasoning I used Taco Seasoning I from this site. Very good. Will definitely make again.

Fully Loaded Cookies

These were a hit in my house. It combines all our favorites in one cookie. I followed the recipe exactly, except I smashed the balls down a little so they would spread a little more. Kids loved them. Definitly going to have to make these for work and the soccer team. Thanks for the recipe.

Chocolate Chip Pumpkin Bread

My family really likes this. I have made this twice and they always disappear quick. I used 2 cups fresh pumpkin instead of canned and reduced the water to 1/3 cup. I also used egg beaters and 1/2 cup applesauce and 1/2 cup canola oil. I make muffins instead of bread because my family tends to eat muffins more than a loaf of bread. This made 6 big muffins, 12 regular muffins, and 24 mini muffins. Will make again and again.

Campbell's Kitchen Beef Stir-Fry

Anything that the whole family will eat, and there not be any leftovers is 5 star in my house. This was very good. For veggies we used yellow squash, zucchini, carrots, and red bell pepper. In addition to the garlic powder we added two cloves of chopped garlic close to the end of cooking. Hubby later admitted that he did add a little bit of red pepper flakes. We will definitely make this again.

Sour Cream Waffles

I was skeptical about this recipe, but I let my son pick and this is the one he chose. My skepticism soon disappeared. These were very good and all the kids really liked them. I used fat free sour cream and nonfat plain yogurt. I left out the vinegar and added vanilla as other reviews suggested. I also used an egg substitute. After cooking about half the batch I added some sugar to the remaining batter. I really don't think it made much of a difference though. We will definitely make these again. Next time I will try vanilla yogurt instead of plain.

No Bake Chocolate Oat Bars

These were so good. I need something to make up for the bad cookies I made the other night. These certainly did the trick. Per other's reviews I decreased the butter to 3/4 cup. I also used a heaping 1/2 cup of peanut butter. This is a very fast easy dessert to make, I was able to whip this up and have in the freezer before having to be at the soccer fields by 8:30 am. Definitly a keeper. Thanks!

Sunflower Cookies

If I had rated these the same day I made them I would have given them one star for effort. They are much better the second day, and seem to be a better breakfast cookie than anything. The first sheet I made I followed the recipe except used canola oil and added 1/4 cup brown sugar per other reviewers suggestions. Hubby tried one and made a horrible face. After that I added chocolate chips to the rest of the batter. He said those were better, but they tasted salty and I used unsalted sunflower seeds. The next day my son grabbed a couple on the way out the door, and said they were good. They did not have the salty taste the second day. Now, my oldest takes them to eat after swim practice. If you are looking for a something that taste like a cookie this is not it. I will probably make these again and take them to out of town soccer tournaments. All in all I would give them 3 1/2 stars.

Slow Cooker Party Mix

This was easy to throw together and I didn't have to heat up the kitchen with the oven. I reduced the celery salt to 1/2 tsp since some said it was too salty, I also used lightly salted peanuts. I also used corn chex instead of wheat. I increased the parmesan cheese (I used freshly grated). I added 1 tablespoon Worcestershire but will add a more next time. I also added some garlic powder, just sprinkled some in the butter mixture. I made this for a trip we were taking over the weekend. I was so proud because I actually go something done in advance, but now I have to make more because the kids got into it before the trip and it is almost gone.

Actually Delicious Turkey Burgers

These were very good. I did change a few things according to other reviews. I added liquid smoke, soy sauce, and worcestershire sauce. I didn't measure it just added a little at a time till it smelled good. I did add a little more than 1/4 cup bread crumbs to help with the stickiness (it was still pretty sticky though). Did not use fresh onions but added some dried minced onions into the mix. Used two cloves of garlic and a little garlic powder. Also used egg beaters for the egg and seasoned salt instead of regular salt. I did a slight coating of flour and Montreal Steak Seasoning (McCormick) to the formed patties. I cooked them on my George Foreman (wanted to grill them outside but was afraid they would fall apart). Served these with sauteed mushrooms. Everyone ate them up. Teenagers ate two of them, which makes them a hit at my house. Will definitely make these again and again.

Cookie Balls

This was very easy to make and my kids loved them. I used chocolate candy coating and white candy coating (also known as almond bark). I did put balls in the freezer to harden before coating them. I did not find it hard to coat them like others did, but that could be because he make chocolate coated pretzels and peanut butter cracker every Christmas. After putting them in the coating and making sure they were covered (used a spoon to scoop some coating over the top) I used a spoon to nudge them onto a fork and then tapped it lightly on the side of the bowl. Then I put them on wax coated paper and back in the freezer. I keep them in the freezer in a freezer bag and pop them in my kids lunch for a special treat. Yummy!

Popcorn Snack Mix

My family really liked this. I made it when my son had "friend" over to watch movies. I did cook my "sauce" a little too long. Either that or stirred it too much so be careful with the sauce. I will definitely make this again.

Cinnamon Belgian Waffles

These were very good. I doubled the recipe and there were only two left over by the time my boys got finished with them. I did not have time to worry about separating the eggs so just put them in whole; however I do think they would have been fluffier had I beat the egg whites as instructed. I also increased the cinnamon (we really like cinnamon) and added a dash of fresh grated nutmeg. We will definitely make these again.

Whole Grain Waffles

These were ok. Very healthy and tasty. I did add a little more sugar and some cinnamon. The 1/2 cup flax seed seemed like a lot so I cut it in half and added 1/4 cup oatmeal. Just used regular pancake syrup on them. Will make them again.

Cinnamon Mini-Muffins

I would give this 5 stars but since I could not resist changing some things I have to give it four. I read some reviews that said they were bland and I noticed that there wasn't actually any cinnamon IN the muffin. Therefore, I added a heavy teaspoon of cinnamon to the batter and used heavy 1/2 teaspoons of nutmeg and allspice. I increased the sugar slightly and added 2 tablespoons of brown sugar. I also added a teaspoon of vanilla to the batter. I did not do the cinnamon sugar topping, instead I made a vanilla (cinnamon roll type)glaze and drizzled it over the muffins after they cooled for a few minutes. These changes made them pretty sweet, but the kids loved them and thought they tasted a lot like cinnamon rolls.
