About this Cook
I live in the South Plains region of Texas. Born and raised Texan. I have four boys that keep us very, very busy, and eat us out of house and home. Love to cook, but with four active kids and a full time job, don't have a lot of time. My other identities include soccer mom (3 teams), swim mom (2 teams), scout mom, and band mom, of course I am usually referred to as "kids name" mom. My grandmother was a great cook. I often wish I could cook like she did. Anyone from the recipe exchange can e-mail me at sgarrett4431@yahoo.com
My favorite things to cook
Love to use my slow cooker and bread machine. Love Mexican food. I also like to make muffins and cookies. Husband loves to cook outside which does not upset me one bit.
My favorite family cooking traditions
Growing up my mother did not cook much so I really don't have any cooking traditions that I grew up with. My husband and I work in the kitchen together every Thanksgiving and Christmas and make the special things that my mother-in-law always asks us to bring. He always makes the sweet potatoes. He never makes them the same way twice but you know they have always been good and there are never any leftovers. For my kids birthdays I always make whatever dessert they want for their special day. My third will always pick a pumpkin pie.
My cooking triumphs
Any meal I make that the whole family likes.
My cooking tragedies
My mother's favorite pie growing up was butterscotch pie, but my grandmother seldom made it for her anymore. So one year I decided to surprise her and make one for Thanksgiving. Found a recipe (not my grandmother's) but did not make one ahead of time to see how it looked or tasted. Big mistake. It was awful, it looked awful and tasted awful. I was so upset.

Pumpkin Cheesecake Squares
This was really good. The whole family liked it. I could only find a 16.5 oz cookie dough so I used the whole thing. I was kinda worried about using the whole bag of cinnamon chips but did it anyway with no regrets. I used a heaping teaspoon of pumpkin pie spice and I think it could have used a little more. HINT - I can only find cinnamon chips around the holidays with the baking goods/chips so be sure to stock up when you see them.

Zucchini Brownies
This has been in my recipe box for a year waiting for me to work up the courage to try it. They were excellent. My whole family loved them. Take the advice of others and DO NOT add an egg. Once you put the zucchini in you will have enough moisture. I let my batter set a few minutes after adding the zucchini then mixed it again. I only wish I had made them sooner in the zucchini season. Will definitely make these often next summer when zucchini is abundant. Oh, I conveniently forgot to tell the kids there was zucchini in these and they never figured it out.

Almost Caramel de Lite Bars
I don't know that these tasted anything like the Caramel de Lite Bars (at least we did not think they did), but they are good and extremely easy to make. Be warned that they are very sweet and a small piece goes along way. I only put coconut on one half so that the coconut haters in my family could have desert too. If you cut these to soon you will need to eat it with a spoon. They firm up nicely once they have cooled completely.
